Little is known about how tourists’ eating habits change between everyday life and holidays. This study aims to identify market segments based on changes in food consumption and experiences of a sun-and-sea destination’s local food. The authors evaluate to what extent tourists consume local food and assess the contribution of local food experiences to the tourists’ overall experience.,The target population was all tourists visiting the Algarve in the Summer 2018 and included both domestic and international sun-and-sea tourists. A sample of 378 valid questionnaires was collected. Data analysis included descriptive analysis, statistical tests and cluster analysis.,Cluster analysis identified three segments: non-foodies, selective foodies and local gastronomy foodies. Results indicate that tourists change their eating habits during holidays, eating significantly more seafood and fish and less legumes, meat, fast food and cereals and their derivatives. International and domestic sun-and-sea tourists reported that eating local food contributes significantly to their overall tourism experience.,Sun-and-sea destinations should promote the offer of local dishes, especially those that include locally produced fish and seafood, to improve the tourist experience, differentiate the destination and increase sustainability.,The authors address three identified research gaps: a posteriori segmentation based on tourists’ food consumption behaviour; measurement of changes in eating practices between home and in a sun-and-sea destination; and assessment of the role of food experiences to overall tourism experience of tourists visiting a sun-and-sea destination.

Segmentation of food market visitors in World Heritage Sites. Case study of the city of Córdoba (Spain)

In recent years, the development and utilization of Intangible Cultural Heritage (ICH) has become an increasingly significant research topic. Worldwide, however, little research has been systematically and comprehensively conducted to review relevant ICH literature. The application CiteSpace was used to identify the research hotspots, frontiers, and trends in China’s ICH field from 2003 to 2020. The results showed that the quantity of published literature has steadily increased throughout the respective period. Scholars and research institutions alike have shown poor cooperation whereby ICH protection received most of the attention. In addition, the digitalization of ICH is an inevitable trend in ICH protection and inheritance, while the combination of ICH and cultural industries constitutes an important approach to ICH utilization and communication. Hence, the ultimate goal of ICH research consists of seeking ways to achieve its sustainable development to satisfy the increasing cultural demands. Findings furthermore show that ICH for rural revitalization constitutes a unique research topic with Chinese characteristics. This study provides insights for scholars and practitioners worldwide to facilitate a better understanding of ICH in China.

Intangible Cultural Heritage in China: A Visual Analysis of Research Hotspots, Frontiers, and Trends Using CiteSpace

Gastronomy represents a significant part of the cultural heritage and identity of tourist destinations; however, related scientific literature is scarce. Considering these aspects within the field of tourism and hospitality, and selecting the articles written in English indexed in the Web of Science and Scopus from 2001 to 2020, the objective of this research is twofold: (1) to present a bibliometric analysis of the literature on gastronomic heritage (71 articles); and (2) to analyze some aspects (main topics, frequency of key terms, methods, and data sources) of the research on case studies in Asia and Europe (46 articles), as they are the most prominent regions on the representative list of the intangible cultural heritage of humanity (UNESCO). The study shows the temporal evolution of the literature on gastronomic heritage in parallel with UNESCO’s actions on cultural heritage. The results reveal that most articles relate gastronomic heritage to the sustainability of tourist destinations, and that European case studies address sustainability more than Asian studies do. Regarding the methodology to analyze Asian and European case studies, qualitative research predominates. Within quantitative studies, the use of online content generated by consumers and marketers as a data source is rare.

Gastronomic satisfaction of the tourist: empirical study in the Creative City of Popayán, Colombia

The purpose of this paper is to analyse the loyalty of the tourists who visit a city with an important heritage event: The Holy Week Processions in the city of Popayan (Colombia), recognised by UNESCO as Intangible Cultural Heritage.,This research focuses on determining the mediating effect of the perception of the processions and the evaluation of the elements of the destination during a visit to the city by using a sample of 615 tourists. The software tool used in this research is the Smart partial least squares.,Results show that the motivations of the visitor are not enough by themselves to guarantee loyalty regarding the destination, but other variables are needed such as the perception of the processions and the evaluation of the elements of the destination, through which the motivation acquires a true meaning to secure the tourist’s loyalty.,The principal practical implication of this research is offering to the stakeholders involved in the promotion and organisation of this event an opportunity to undertake and review actions for improvement.,This research seeks to enlighten the interaction between heritage, sustainability and heritage in Latin America.

Los procesos de articulaciony relacionamiento Universidad-Empresa-Estado (uee),actualmente son vistos como un fenomeno social participativo y han empezado acobrar importancia en el Cauca, especificamente en la construccion de un modelode desarrollo competitivo para el departamento. Esta dinamica se sustenta enestrategias de gestion de conocimiento como mecanismo para intercambiar yvalorar el aprendizaje y el conocimiento de las comunidades y sectoresestrategicos del Cauca, para la consolidacion de sinergias y la proyeccion deltrabajo colaborativo entre las diferentes iniciativas que se impulsan en laregion. En estecontexto, se encuentran articulados el Consejo Departamental de cti para impulsar la conformacion de siete Nucleos de Innovacion con la participacion de las universidades del Cauca y unosde los grupos de investigacion; del sector empresarial de Popayan y del nortedel Cauca; de las entidades interfaz; del Sena y del equipo de gobiernomunicipal, departamental y nacional.  La metodologia empleada para este proceso deconstruccion participativa, es con el desarrollo de talleres de sensibilizaciony socializacion, programas de capacitacion, talleres de sistematizacion eintercambio de experiencias.
