TL;DR: In this article, an aqueous process was investigated for the recovery of oil and food grade protein from fresh coconuts, which was related to three critical unit operations: separation of oil from the fiber, destabilization of an oil-in-water emulsion, and recovery of a protein product that is low in oil content.

Microbiological evaluation of coconut and coconut products

TL;DR: The shell of coconuts contained large populations of various microbial types, including Acinetobacter, Enferobacteriaceae, Flavobacterium, Micrococcus species and yeasts and molds, which predominated in spray-dried and intermediate moisture products prepared from coconut skim milk.
