Journal ArticleDOI

Dietary fibre and fibre-rich by-products of food processing: Characterisation, technological functionality and commercial applications: A review

TL;DR: In this paper, analytical methods and fractionation techniques of dietary fibres are evaluated for improving physical and structural properties of hydration, oil holding capacity, viscosity, texture, sensory characteristics, and shelf-life.
Journal ArticleDOI

Date seeds: chemical composition and characteristic profiles of the lipid fraction

TL;DR: In this article, the seeds of two date palm (Phoenix dactylifera L.) cultivars, Deglet Nour and Allig, from the Degach region of Tunisia, were analyzed for their main chemical composition.
Journal ArticleDOI

Nigella sativa L.: Chemical composition and physicochemical characteristics of lipid fraction

TL;DR: In this paper, the physicochemical properties of two Nigella seed varieties, having a Tunisian and Iranian origin, were determined by a cold solvent method, and the results indicated that Nigella seeds could deserve further consideration and investigation as a potential new multi-purpose product for industrial, cosmetic and pharmaceutical uses.
Journal ArticleDOI

Chemical composition and functional properties of Ulva lactuca seaweed collected in Tunisia

TL;DR: The study of the functional properties of the dried “Ulva lactuca” algae proved that SWC, WHC and OHC of this alga varied with temperatures and that were comparable to those of some commercial fibre rich products.
