Hair is a proteinaceous fibre with a strongly hierarchical organization of subunits, from the α-keratin chains, via intermediate filaments, to the fibre. The chemistry of the different morphological compartments results in exciting physical properties, including the hydrophilic/hydrophobic paradox. The present tutorial review will be of interest for protein- as well as polymer chemists, who want to learn from nature, and also for biochemists interested in the cytoskeleton and particularly in intermediate filaments; it also presents a scientific basis for hair cosmetics.

Publisher Summary This chapter focuses on structural proteins of the cells and tissues. Proteins and complexes of proteins with lipids and carbohydrates form the basis of the structural components of cells and tissue. These structural proteins have, in the past, been investigated chiefly by the techniques of classical morphology, advances during the last two decades in the chemistry of these complex molecules and in physical techniques for investigating their internal architecture have laid the foundation for new correlations between structure and function. In this new synthesis, data of analytical chemistry must be related not only to ultrastructural considerations, but to the whole body of available information of morphology, physiology, and biochemistry. In certain tissues, such as muscle, it is possible to extract the structural protein and characterize its chemical and physical properties. The extraction of intracellular protein components by suitable reagents, such as water and salt solutions, and the isolation of these components by differential centrifugation has proven a powerful tool in determining the chemical composition and probable role of these constituents in the cell.

Das Rontgendiagramm der „einfachen idealen Spiralfaser“ zeigt neben vollen Kreisen auch Punkte und ungleich lange Kreisbogenstreifen, die in doppeltsymmetrischer Anordnung den Durchstospunkt als Mittelpunkt umgeben; aus einem solchen Diagramm last sich die Kristailitordnung quantitativ festlegen, und insbesondere kann der Steigungswinkel der Spirale schon aus der Vermessung eines Streifens berechnet werden.

Als hervorzuhebende Spezialfalle der ‚'einfachen idealen Spiralfaser“ treten die „einfache ideale Ringfaser“ und die „einfache ideale Faser“ auf; in den Diagrammen der Ringfaser finden sich volle Kreise, aber auch Punkte und Kreisbogenstreifen ungleicher Lange, deren Mitten alle auf der horizontalen Symmetrieachse liegen; die Faserdiagramme* weisen nur Punkte auf, die in doppeltsymmetrischer Anordnung den Durchstospunkt als Mittelpunkt umgeben.

Die von Herzog und Jancke an Muskel-, Nerven-, Sehnenfasern und Haaren gefundenen Diagramme zeigen, das diese faserigen biologischen Praparate als „mehrfache reale Spiral- und Ringfasern“ aufzufassen sind.
