Journal ArticleDOI

Physicochemical characterization of changes in pea protein as the result of cold extrusion.

TL;DR: In this paper , a low-temperature extrusion process was used to selectively alter the chemical structure of pea protein, and the physicochemical properties of the pea proteins were characterized through FTIR, ANS- probes, zeta potential, and SDS-PAGE.
Journal ArticleDOI

Bioinformatic Approaches for Characterizing Molecular Structure and Function of Food Proteins.

TL;DR: A protein structure-function relationship relationship framework, in which bioinformatic properties are linked to physicochemical experimentation, is proposed in this paper , where strong correlations exist for protein secondary structure, electrostatic potential, and surface hydrophobicity.
Book ChapterDOI

Fish and Shellfish Toxins

TL;DR: Fish- and shellfish-associated toxins are generally derived from toxic microalgae or cyanobacteria growing in the water from which the fishes are harvested with the exception of the scombroid toxin, which is associated with bacterial decarboxylation of fish protein.
