Journal ArticleDOI

Assessment of probiotic properties in lactic acid bacteria isolated from wine.

TL;DR: The probiotic features of 11 strains of Lactobacillus, Pediococcus, and Oenococcus spp, including saliva and acid resistance, bile tolerance and exopolysaccharides' production, were investigated, suggesting good adaptation of the wine strains to gastrointestinal conditions.
Journal ArticleDOI

Anti-adhesive activity of cranberry phenolic compounds and their microbial-derived metabolites against uropathogenic Escherichia coli in bladder epithelial cell cultures

TL;DR: The results proved for the first time the anti-adhesive activity of some cranberry-derived phenolic metabolites against UPEC in vitro, suggesting that their presence in the urine could reduce bacterial colonization and progression of UTI.
Journal ArticleDOI

Study of Proteolysis in Artisanal Cheeses: High Performance Liquid Chromatography of Peptides

TL;DR: The peptides of the water-soluble N fractions of different varieties of artisanal cheeses from Asturias (Afuega-l Pitu, Beyos, Vidiago, Cabrales, and Peral) were analyzed by reversed-phase HPLC as mentioned in this paper.
Journal ArticleDOI

Preservation of the Microbiological and Biochemical Quality of Raw Milk by Carbon Dioxide Addition: A Pilot-Scale Study

TL;DR: It was concluded that degasification and pasteurization on a pilot scale eliminated CO2 from milk with minimum detrimental effects on its biochemical and sensory properties, making this process acceptable for milk preservation.
