Journal ArticleDOI
Understanding and modelling bacterial transfer to foods: a review
TL;DR: It is concluded that high levels of moisture, contact time and pressure could result in higher transfer between surfaces and the identification and elimination of certain tasks or activities involving higher levels of these factors could be helpful to prevent bacterial transfer.
Journal ArticleDOI
Modelling the growth boundaries of Staphylococcus aureus: Effect of temperature, pH and water activity.
Antonio Valero,Fernando Pérez-Rodríguez,Elena Carrasco,J.M. Fuentes-Alventosa,Rosa María García-Gimeno,Gonzalo Zurera +5 more
TL;DR: The microbial behaviour of five enterotoxigenic strains of Staphylococcus aureus was studied in the growth/no growth domain and model predictions agreed with published data in 94% of growth cases and in 62% of no growth cases.
Journal ArticleDOI
A mathematical risk model for Escherichia coli O157:H7 cross-contamination of lettuce during processing.
F. Pérez Rodríguez,Danilo T. Campos,Elliot T. Ryser,Annemarie L. Buchholz,Guiomar Denisse Posada-Izquierdo,Bradley P. Marks,Gonzalo Zurera,Ewen C. D. Todd +7 more
TL;DR: Model showed that the pathogen was able to survive and be present in the final bags in all simulated interventions scenarios although irradiation was a more effective decontamination step in reducing prevalence than chlorination or pathogen testing under the same simulated conditions.
Journal ArticleDOI
Evaluation of hygiene practices and microbiological quality of cooked meat products during slicing and handling at retail.
Fernando Pérez-Rodríguez,R. Castro,Guiomar Denisse Posada-Izquierdo,Antonio Valero,Elena Carrasco,Rosa María García-Gimeno,Gonzalo Zurera +6 more
TL;DR: Results indicated that SMEs showed a more deficient handling practices compared to LEs and microbiological counts indicated similar microbiological quality in cooked meat samples for both types of establishments, suggesting more effort should be made to adequately educate handlers in food hygiene practices.
Journal ArticleDOI
Growth of Listeria monocytogenes on shredded, ready-to-eat iceberg lettuce
TL;DR: In general, the MAP system reported here retarded the growth of L. monocytogenes in comparison with other works without initial flushing of gases, although at 5 °C they were closer.
