Defluoridation performance of nano-hydroxyapatite/stilbite composite compared with bone char

The efficiency of extracts from Arbutus unedo L. (AU), Crataegus monogyna L. (CM), Rosa canina L. (RC), and Rubus ulmifolius Schott. (RU) to inhibit lipid oxidation in raw, cooked and cooked and chilled (2°C/12 d) porcine burger patties, was investigated. The modification of the fatty acid profile during processing treatments (cooking and chilling), the quantitative measurements of thiobarbituric acid reactive substances (TBA-RS), and lipid-derived volatiles, were used as indicators of lipid oxidation. Polyunsaturated fatty acids (PUFA) gradually decreased during cooking and the subsequent storage of cooked burger patties with this decrease being significantly greater (P<0.05) in control patties than in those with added berry extracts. In accordance, the control patties showed significantly higher TBA-RS numbers and counts of lipid-derived volatiles in all treatments when compared to the berry-added counterparts (P<0.05). Results from the present work show, for the first time, that extracts from A. unedo, C. monogyna, R. canina, and R. ulmifolius are promising antioxidants which could enhance the nutritional, safety and sensory properties of porcine burger patties.

Growth hormone (GH) is an anabolic hormone which sintesized and secreted by somatrotop cell inpituitary anterior lobe. GH exert its effect on growth and metabolism by interacting with a specificreceptor on the surface of the target cells. Growth hormone receptor (GHR) has been suggested ascandidate gene for traits related to meat production in Bovidae. The objectives of this study were toidentify polymorphism of GH and GHR genes in buffalo. The 452 DNA samples buffalo were collectedfrom five populations in Indonesia (Siborong-Borong-Medan (65), Lebak-Banten (29), Pandeglang-Banten (180), Semarang-Central Java, and Mataram-West Nusa Tenggara (103)). A gene fragment of theGH|AluI gene at 432 bp located on exon 3 and GHR|AluI gene at 298 bp on exon 10 were successfullyamplified by using the techniques of a PCR (polymerase chain reaction) and genotyped by PCR-RFLP(restriction fragment length polymorphism) then -SSCP (single strand conformation polymorphism). Theresults showed no polymorphisms were detected in these genes. All buffaloes tested had LL genotype forlocus GH|AluI and AA genotype for locus GHR|AluI.

Identification of gh|alui and ghr|alui genes polymorphisms in indonesian buffalo

Falsification of the origin of livestock meat and its processed with rat meat is a problem that must be overcome to ensure food safety. One way that is often used to detect forgeries by using cytochrome b gene as a marker. The purpose of this study was to create a specific primer derived from cytochrome b sequences in rat ( Rattus norvegicus ) as the DNA marker to detect any contamination of rat meat on fresh livestock meat and its processed meat products. Meatballs were made from beef meat with the addition of rat 1%-25%, and the meatballs were obtained from traditional markets. DNA extraction was conducted from seven species (goat, chicken, cattle, sheep, pig, horse, and rat) by using phenol-chloroform. The highest success rate in detecting the presence of rat meat in a mixture of beef meatballs at concentration of 15% was 100%. The specific fragment of cytochrome b gene in R. norvegicus has no similarity with the cytochrome b gene from six other species, so it can be used as molecular markers to detect the presence of rat meat contamination in the processed of meat products. Amplified fragment length for goats, chickens, cattle, sheep, pigs, horses, and rats 157, 227, 274, 331, 398, 439 and 603 bp respectively. The amplification of cytochrome b gene in seven species of animals with different fragment length indicated the specificity of cytochrome b gene sequences among species.

The Use of Cytochrome b Gene as a Specific Marker of the Rat Meat (Rattus norvegicus) on Meat and Meat Products

Animal bone waste in Indonesia is quite high due to the high consumption of chicken, beef and pork. Bone charcoal is charcoal made from animal bones which can be utilized for reducing levels of fluoride (F) in groundwater. This study is aimed to assess the utilization of chicken bones into charcoal to reduce levels of fluoride (defluoridation) groundwater in Indonesia. Materials used in this study are chicken bones as raw materials for bone charcoal. The measured variables were (1) The quality of chicken bone charcoal, (2) Adsorption capacity of the bone charcoal to Fluoride in groundwater. The results showed that chicken bone charcoal consists of O2, Ca, P, C, Na, Mg and Al. Chicken bone charcoal has a quite high of the adsorption capacity as much as 67%. The more chicken bone charcoal is added to the higher percentage of Fluoride tends to increase the adsorption capacity up to 12 h. Therefore, chicken bone waste has a high potency to be processed become chicken bone charcoal for defluoridation of ground water.

Chicken Bone Charcoal for Defluoridation of Groundwater in Indonesia

The research objectives were to evaluate and compare of production performances and blood metabolicprofiles of garut and jonggol rams fed with mung bean sprout waste and omega-3. This research used 24rams aged of 1-2 years, consisted of 12 garut rams weighed of 36,43±1,45 kg (CV=13,87%) and 12 jonggolrams weighed of 23,09±0,57kg (CV=8,64%). Research used Completely Randomized factorial Design(CRD 2x3) with 2 main treatments x 3 factorials and four replications. The first factors as the maintreatments were different breeds of garut and jonggol. The second factors as the factorial treatments werethree different feed percentages which consisted of P0 (40% grass+60% concentrate I), P1 (40% mung beansprouts waste+60% concentrate II), and P2 (40% mung bean sprouts waste+60% concentrate II+omega-3).Data were analyzed by analysis of variance (ANOVA) and proceeded by Duncan Range Test. The resultsshowed that P1 had the highest performance on feed efficiency and average daily gain (ADG) parameters.Blood metabolic test showed that blood total protein, cholesterol, and glucose of all rams were normal. Inconclusion feeding rams with mung bean sprout waste as grass substitution have a positive effect on theperformance of the rams production performance.

Performans Produksi dan Profil Metabolik Darah Domba Garut dan Jonggol yang Diberi Limbah Tauge dan Omega-3 (PRODUCTION PERFORMANCE AND BLOOD METABOLIC PROFILES OF GARUT AND JONGGOL RAMS THAT WAS FED MUNG BEAN SPROUT WASTE AND OMEGA-3)

The aim of this experiment was to evaluate histology and physical variables of buffalo meat at different sex and ages. Thirty head of buffaloes were used in this experiment. Muscle fiber diameter, fasciculus diameter, thickness of connective tissue, pH, water holding capacity, Warner-Bratzler shear force and cooking loss were measured in this experiment. Analysis of variance of randomized factorial design was used to analyse the data. The differences were analysed by Tukey test. The result showed that muscle fiber diameter was influenced by ages. The difference muscle fiber diameter among ages indicated that 8-12 mo and 1.5 yr old have smaller diameter compared to three year old (P<0.05), but  there was no differences between  two, three and four years old. The fasciculus diameter, thickness of connective tissue, tenderness, pH value, water holding capacity, and cooking lost  indicated no significant found in all stage of age and sex of samples. Meat qualities of buffaloes were not affected by age (2-4 yr) and sex.
