The Effect of In Vitro Digestion on Matcha Tea (Camellia sinensis) Active Components and Antioxidant Activity
TL;DR: In this article , the effects of in vitro digestion on the antioxidant activity and release of phenolics, xanthine alkaloids, and L-theanine contents of matcha were investigated.
Journal ArticleDOI
Preparation of protein products from collagen-rich poultry tissues
TL;DR: In this paper, the authors investigated the possibility of extracting collagen products, gelatines, or alternatively hydrolysates, from chicken stomachs after prior biotechnological treatment with the proteolytic enzyme Protamex.
Journal ArticleDOI
Preparation of non-traditional Dickkopf and Richard wheat flakes: Phenolic and vitamin profiles and antioxidant activity
TL;DR: In this article, non-traditional, conventional and commercial wheat flakes were analyzed for vitamin B-complex, α-tocopherol, total phenolics and HPLC profile and antioxidant activity in soluble free, soluble conjugated and insoluble bound phenolic fractions.
Journal ArticleDOI

Klara Vojackova,Jiří Mlček,Soňa Škrovánková,Anna Adámková,Martin Adámek,Jana Orsavová,Martina Buckova,Vlastimil Fic,Lenka Kouřimská,Martin Buran +9 more
TL;DR: In this paper, the authors evaluated the antioxidant activity of grape pomace (which is homogenized into a brown powder) and selected commonly available commercial flours (wheat, rye plain, and rye whole grain flour) using DPPH (2,2-diphenyl-1-picryl-hydrazyl-hydrate) and total polyphenol content method, where was used Folin-Ciocalteaure agent and then it was determined by spectrophotometric method (the measure of absorbance).
Journal ArticleDOI
Non-traditional muesli mixtures supplemented by edible flowers: Analysis of nutritional composition, phenolic acids, flavonoids and anthocyanins
TL;DR: In this paper, the effect of using medicinal plants on nutrition composition and biologically active substances in cereal mixtures were investigated, and the results indicate that non-traditional muesli with edible flowers containing a high amount of nutrients and bioactive substances have the potential to enhance a nutritionally balanced diet.
