TL;DR: In this article, the authors evaluated the effectiveness of selected natural antioxidants to reduce warmet-over-flavor (WOF) development in cooked ground beef, and found that grape seed extract (ActiVin) and pine bark extract (Pycnogenol) singificantly improved the exildative stability of cooked beef.
