TL;DR: In this article, the antioxidant activity of essential oils from several spices widely used in Mediterranean countries was tested: oregano (Origanum vulgare), thyme (Thymus vulgaris), rosemary (Rosmarinus officinalis), sage (Salvia officinalsis), and clove (Syzygium aromaticum).
