Purpose – The purpose of this paper is to explore the impact of the effective implementation of both ISO 9001 and ISO 22000 systems on the competitive performance of certified food manufacturing companies.Design/methodology/approach – A survey instrument was used for quantitative data collection. All items were measured on a seven‐point modified Likert scale. The data were analysed statistically by means of Statistical Package for Social Scientists. Factor analysis and multiple regression analysis were conducted to test the research hypotheses. Both validity and reliability of the measures were checked in order to reduce the measurement error.Findings – The results show a positive and significant relationship between the combined effective implementation of ISO 9001 and ISO 22000 standards and competitive performance of certified food companies, explaining a significant proportion of variance in their performance.Practical implications – The results of this study help managers of food companies realize th...

Effects of the perception of traceable fresh food safety and nutrition on perceived health benefits, affective commitment, and repurchase intention

Millions every day purchase their raw meat in wet markets around the globe, especially in Hong Kong city, where modern and a traditional way of living is made possible. While food hygiene standards in Hong Kong have more recently focused on the safety of meat sold in these wet markets, the hygienic surface level of wooden cutting boards used for processing meats is seldom observed. This original study performed microbial community profiling, as well as isolating and identifying various strains multiple wooden cutting boards from nine wet markets located on Hong Kong Island. Our study also investigated the efficiency of scraping the surface of cutting boards as a traditional cleaning technique in Hong Kong. Results indicate that these hygienic practices are inefficient for guarantying proper surface hygiene as some most tested cutting boards were found to harbour microbial species typically associated with hospital nosocomial infections, such as Klebsiella pneumoniae. Further analysis also led to discovering the presence of antibiotic-resistant genes (ARGs) among isolated strains. Our results showcase the significance and effects of cross-contamination in Hong Kong wet markets, especially with regards to the potential spreading of clinically-relevant strains and ARGs on food processing surfaces. This study should, therefore, serve as a basis to review current hygienic practices in Hong Kong’s wet market on a larger scale, thereby improving food safety and ultimately, public health.

Purpose




The purpose of this paper is to make a fair attempt to craft a framework for the categorization of the literature linked to food supply chain management (FSCM) and to contribute toward doctoral food research. This will benefit researchers, academicians and corporates. The research is based on an analysis of research articles and research reports. The research articles were mainly extracted from Emerald and Science Direct (Elsevier) databases.




Design/methodology/approach




A total of 100 randomly selected peer-reviewed journal articles on FSCM from commercial databases such as Emerald and Science Direct (Elsevier) were systematically analyzed.




Findings




Relatively limited empirical-prescriptive research has been carried out in a food supply chain. The outcome is that the literature on the food supply chain is primarily focused on theoretical-descriptive research.




Originality/value




It is observed that limited research has been carried out on FSCM. Therefore, the authors have suggested a framework for the categorization of the literature linked to FSCM. This will facilitate future research in the area of FSCM.

Processed food supply chain: a framework for literature review

Dairy industry plays a vital role in enriching the socio-economic status of rural India, particularly in women empowerment. In general, either a structure or subcomponents of dairy supply chain is discussed in the literature, but the rational (why, what, how) is missing. Further, the structured-literature-review (SLR) of dairy supply chain management (DSCM) practices is scarce. This paper presents an SLR of articles published in the context of DSCM practices. The paper further assesses the extent to which the SLR approach can be applied to DSCM so as to produce a consistent knowledge stock by evolving a context-sensitive study. The key challenges discussed in reviewed articles are highlighted. Authors selected the articles published in peer-reviewed journals and categorized the articles published in recent eleven years into three main subjects of supply chain i.e. distribution management (DM), risk management (RM), and decision-making strategies (DMS). The findings of this study show that the food safety, product quality, and associated economic benefits in dairy industry can be achieved through technological innovation, eradication of uncertainties, and introducing the global SCM practices into lean and green initiatives.

A structured-literature-review of the supply chain practices in dairy industry

Purpose – The purpose of this paper is to investigate perspective in explaining how global food safety can be created through stringent implementation of Codex and World Trade Organization (WTOs) Sanitary and Phytosanitary food safety regulations and suggests the appropriate food safety system for India. Design/methodology/approach – The study has been deployed a survey questionnaire using a sample of Indian Processed food sector. In order to collect data 1,000 supply chain professional were contacted for seeking their consent to be part of the survey. Whereas total responses collected were 252 from Delhi and NCR, with response rate 25.2 percent. Global food safety: determinants are Codex standards and WTO's SPS food safety regulations

Urban consumers in India have been increasing consumption of frozen processed food. With more supermarkets opening, especially in cities, women are increasingly shopping in these outlets as they are more convenient, comfortable and have the space to keep large refrigerators to store frozen processed food. The infrastructure in the cities is much more developed therefore retailers are able to store frozen processed food without worrying about consistent and long power cuts. The convenience of frozen processed vegetables, meats and ready meal has encouraged many women to increase the usage of these products as they reduce the preparation time. Peas are used in many vegetables and are demanded round the year by all the families and are also required in catering industry. The fresh peas are available only during winter season but are generally required in all the seasons. Also their harvest is limited to certain states. This gap between demand and supply is being managed by frozen peas available in the Indian market. This paper presents a case on Frozen Products Indian Ltd. and it evolves around frozen peas storage, individual quick freezing technique. It requires proper cold chain management right from sourcing, manufacturing, processing, dispatching for retailing and at consumers end. The complete temperature controlled supply chain is maintained using refrigerated vans and storage equipment.

Food safety issues are becoming more important in India. It is not because of global pressure of the World Trade Organization (WTO), a monitoring agency in this respective field, it is because of customers’ increasing demand for better quality food. The Food Safety Standards Authority of India (FSSAI) came into existence under Food Safety and Standards Act, 2006. It covers all the global food safety norms laid down by WTO such as goods manufacturing practices (GMP), good hygienic practice (GHP), and hazard analysis critical control point (HACCP). This paper illustrates implementation of HACCP, food safety controls and its status in India using a case study of Deli Processed Food Products Ltd. (DPFPL, organisation’s name is disguised) which deals in milk processing and milk products production in India.

The effectiveness of logistic regression had been understood by many authors. A special attention is paid by authors to write section on multivariate statistics in books. The books have explained the theoretical method of predicting the dichotomous dependent variable from a set of binary explanatory variables and their relationship is not linear but interacts with each other. The logistic regression is free from various restrictive assumptions as required in case of ordinary regression or least square regression. The objective of the current research paper is to illustrate how effective is the logistic regression applied in processed food supply chain management. A primary survey was conducted and 252 responses were gathered to conduct the research. A complete step by step process of logistic regression is explained in the current paper. The results of paper confirm that logistic regression is an effective tool for research and it can be applied to various other sectors such as human resource management, etc.
