Journal ArticleDOI

Betalains--a new class of dietary cationized antioxidants.

TL;DR: Red beet products used regularly in the diet may provide protection against certain oxidative stress-related disorders in humans, and betanin bioavailability in humans was demonstrated with four volunteers who consumed 300 mL of red beet juice, containing 120 mg of the antioxidant.
Journal ArticleDOI

Natural antioxidants in grapes and wines

TL;DR: In this paper, the antioxidative effects of wine phenolics on the catalysis of lipid peroxidation by biological catalysts such as myoglobin, cytochrome c, iron ascorbate, and copper ions were determined.
Journal ArticleDOI

Nitric oxide, an inhibitor of lipid oxidation by lipoxygenase, cyclooxygenase and hemoglobin.

Joseph Kanner, +2 more
- 01 Jan 1992 -
TL;DR: Nitric oxide may act as a modulator of the arachidonic acid cascade and in the generation of oxygen-active species and the radical scavenging ability of the nitroxide radical.
Journal ArticleDOI

PH-dependent forms of red wine anthocyanins as antioxidants.

TL;DR: The pseudo-base and quinoidal-base malvidin 3-glucoside significantly inhibited the peroxidation of linoleate by myoglobin and both compounds were found to work better than catechin, a well-known antioxidant.
Journal ArticleDOI

Bioavailability of Red Wine Anthocyanins As Detected in Human Urine

TL;DR: In this paper, the potential bioavailability, in human, of several anthocyanins from red wine was determined, by HPLC analysis with a photodiode array detector, and the same volunteers repeated the same procedure but replaced the water of the fourth drinking dose with white wine.
