Fermentation parameters for phytase production in column-type bioreactor were monitored using a new data acquisition system. There are a number of studies reporting phytase production in flasks, but a lack of data about microorganism respiration behaviour during phytase production using column bioreactor. The objectives of this work were the monitoration of fermentation parameters during phytase production and its relation with fungal growth and forced air. Phytase production by A. niger FS3 increased with forced air. The O2 consumption and CO2 production during solid-state fermentation were monitored by sensors (in the bottom and top of the columns) linked to controllers, recorded by acquisition software and processed by Fersol2® software tool. Phytase synthesis was associated with fungal growth. Therefore, phytase could be used to estimate FS3 biomass formed in citric pulp degradation.

This chapter has the purpose of explaining some of the Instrumentation and Control concepts and their application in solid-state fermentation. When dealing with instrumentation, it is important to keep in mind that it could be divided in four parts: Sensors, Actuators, Control, and Communication Network. Some of the newest technologies appear first in industrial sensors and controlling systems, indeed some of them are specific necessities developed. Industrial automation and control demands large amounts of investment, thus these devices suppliers do not have doubts about using the more updated technology, even if costs are high. However, the usual sensors and control devices are more and more cost effective due to electronic industry development and the demand and supply behavior.

Instrumentation and Control in SSF

The technological progress in informatics and computation sciences has been increasing faster than most could imagine or even understand, not only because of its velocity but essentially because of its large scope of applications. With constant improvements of performance features and relative drop of prices, these equipments are more and more cost effective. One of the areas where the demand for more computing power is most notorious is in biotechnology, especially in DNA researches, where it could turn into the driving force of development because of the need to store and analyze the enormous amount of genomic and proteomic data. However, almost the same has been taken place in all other biotechnology areas. Actually the advances are not only in hardware specifications. Indeed there are new programming techniques, new and powerful languages, and even new entire programming frameworks. Together with the hardware performance these software developments allow more complex problems solution. This chapter will discuss some of the new techniques, solutions and challenges concerning the computing uses in biotechnology and show some examples of implementation like Fersol2 software, for instance.

Informatics in Solid-state Fermentation

Data acquisition systems in bioprocesses have distinct working specification. These processes normally involves microbial cells, vegetable cells, mammalian cells, microalgae cells or even enzymatic biochemical reactions, which implicates in time required for biochemical transformations and biomolecules production. Monitoring bioprocesses do not require real time monitor, because low times intervals (minutes or seconds) do not present significant differences on process parameters values. Bioprocesses are important area in the biotechnology and they are applied in many industries. It has many reaction routes available at any time, each one permitting a different distribution of biomolecules and products based on the conditions under which the fermentation process takes place. Control techniques are indicated to improve the productivity, yield and efficiency of the biotechnological processes. In the bioprocesses, it is very important to have a real time analysis of the process for creating a product with high speed, quality and economy. Knowing the parameters which affect biomolecule formation as well as the concentration of the nutrients, and develop or chose a cheap and simple system capable of on line measurements are required for bioprocesses control.
