Antioxidant activity of sesame cake extract

TL;DR: In this paper, sesame cake was also subjected to successive extractions with solvents of differing polarity to get a purified antioxidant extract with higher antioxidant content and better activity, and the antioxidant activity was evaluated using the β-carotene bleaching method, linoleic acid peroxidation method and free radical scavenging assay, using 2,2-diphenyl-1-picryl hydrazyl radical (DPPH ).
Journal ArticleDOI

The characteristics of muscle fiber types of longissimus thoracis muscle and their influences on the quantity and quality of meat from Japanese Black steers

TL;DR: Forty-four Japanese Black fattening steers from four groups, produced in four districts and consisting of differing genetic backgrounds were slaughtered to examine the characteristic differences in muscle fiber types at the 6th thoracic vertebra of the M. longissimus thoracis.
Journal ArticleDOI

Study of physicochemical properties of edible oil and evaluation of frying oil quality by Fourier Transform-Infrared (FT-IR) Spectroscopy

TL;DR: In this paper, the authors used FT-IR spectroscopy to evaluate the degree of oxidation after heating and frying processes, and found that due to the temperature change in the oil there is a notable difference in the spectral band which showed that the proportions of the fatty acids were changed.
Journal ArticleDOI

Physicochemical and antioxidant properties of buckwheat (Fagopyrum esculentum Moench) protein hydrolysates.

TL;DR: In this paper, the enzymatic hydrolysis of common buckwheat (Fagopyrum esculentum Moench) protein isolate by Alcalase and some physiochemical and antioxidant properties of the resulting hydrolysates were characterised.
Journal ArticleDOI

Fatty acid composition and rheological behaviour of prickly pear seed oils

TL;DR: The structural state of crude oil was confirmed using a contrast phase microscope, and the particle size distribution was obtained by laser granulometry, highlighting the presence of large aggregates of crystal fatty acids in both Opuntia crude oils.
