TL;DR: Stearoylated microcrystalline cellulose (SMCC) was prepared by modifying MCC with stearoyl chloride under heterogeneous conditions and could efficiently stabilize W/O Pickering emulsions and HIPEs and could only be prepared via the two-step method.
