Infrared-Assisted Freeze Drying of Tiger Prawn: Parameter Optimization and Quality Assessment

TL;DR: In this paper, an extensive experimental study coupled with statistical analysis on infrared-assisted freeze drying of tiger prawn (Penaeus monodon) in cuboidal geometry is presented, which aims to estimate quality attributes of freeze-dried prawn in terms of final product temperature (below protein denaturation temperature), rehydration ratio, and final moisture content as a function of process parameters.

How to Adapt a Lab-Scale Freeze Dryer for Assessing Dehydrating Curves at Different Heating Conditions

TL;DR: In this paper, a laboratory-scale freeze dryer was adapted to allow control of the heat supply and on-line monitoring of sample weight during drying under vacuum condition, and the system was also tested with 10mm-thick banana slices, obtaining the fruit drying rate at different sample holder plate temperatures including 20 and 30°C as well as an unheated plate.

An analysis of the lyophilization process using a sorption-sublimation model and various operational policies

TL;DR: In this article, the authors studied the freeze-drying process under various operational policies through the use of a sorption-sublimation model and showed that the criterion used in terminating the freeze drying process is of extreme importance since it may lead to an undesirable water profile which may deteriorate the quality of the dried product.
