Journal ArticleDOI
Relationships between molecular structure and perceived odor quality of ligands for a human olfactory receptor.
Guenhaël Sanz,Thierry Thomas-Danguin,El Hassan Hamdani,Claire Le Poupon,Loïc Briand,Jean-Claude Pernollet,Elisabeth Guichard,Anne Tromelin +7 more
TL;DR: It is demonstrated that OR1G1 recognizes a group of odorants that share both 3D structural and perceptual qualities that contribute to the coding of waxy, fatty, and rose odors in humans.
Journal ArticleDOI
Identification of Odorant-Receptor Interactions by Global Mapping of the Human Odorome
Karine Audouze,Anne Tromelin,Anne Marie Le Bon,Christine Belloir,Rasmus Koefoed Petersen,Karsten Kristiansen,Søren Brunak,Olivier Taboureau,Olivier Taboureau +8 more
TL;DR: A chemical systems level approach based on protein-protein association network to investigate novel hOR-odorant relationships and an odorant-protein matrix to explore global relationships between chemicals, biological targets and disease susceptibilities are developed.
Journal ArticleDOI
α CÉTOPHOSPHONATES ET ESTERS CYCLIQUES D'HYDROXYMÉTHYLÈNES DIPHOSPHONATES SYNTHESES, STRUCTURES ET HYDROLYSE
TL;DR: In this article, the synthesis of symmetrical diesters derived from hydroxy methylene diphosphonic acids was described either in one step or via the corresponding α ketophosphonate 1a to 8a.
Book ChapterDOI
Protein-flavour interactions
TL;DR: In this paper, the effect of medium on protein-flavour interactions has been investigated in the context of food systems, where protein structure in relation to flavour binding has been studied.
Journal ArticleDOI
New determinants of olfactory habituation.
Charlotte Sinding,François Valadier,Viviana Al-Hassani,Gilles Feron,Anne Tromelin,Ioannis Kontaris,Thomas Hummel +6 more
TL;DR: Results showed odorants differed significantly in habituation, highlighting the multifactoriality of habituation and the importance of trigeminality which is highly correlated to intensity and pleasantness.
