Grana Padano cheese whey starters: microbial composition and strain distribution.

TL;DR: The aim of this work was to evaluate the species composition and the genotypic strain heterogeneity of dominant lactic acid bacteria isolated from whey starter cultures used to manufacture Grana Padano cheese, and indicated a markedly low infra-species diversity.
