Journal ArticleDOI

Acetic Acid Bacteria in the Food Industry: Systematics, Characteristics and Applications.

TL;DR: This review focuses on the history of taxonomy, biochemical aspects and methods of isolation, identification and quantification of AAB, mainly related to those with important biotechnological applications.
Journal ArticleDOI

Optimized methodology for extraction of (1 →3)(1 → 6)-β-D-glucan from Saccharomyces cerevisiae and in vitro evaluation of the cytotoxicity and genotoxicity of the corresponding carboxymethyl derivative

TL;DR: An optimized methodology for extraction of β- d -glucan from S. cerevisiae cells, involving sonication and enzyme treatment, with a yield of 11.08 ± 0.19%, is developed and in vitro tests with CM-G did not reveal any cytotoxic or genotoxic effects or influences of this molecule on cell viability.
Journal ArticleDOI

Followed extraction of β-glucan and mannoprotein from spent brewer's yeast (Saccharomyces uvarum) and application of the obtained mannoprotein as a stabilizer in mayonnaise

TL;DR: In this article, a method to extract both β-glucan and mannoprotein (MP) from the cell wall of spent brewer's yeast (S. uvarum), particularly with the obtainment of MP by an additional step in a non-degrading procedure, was evaluated.
Journal ArticleDOI

Veratryl alcohol stimulates fruiting body formation in the oyster mushroom, Pleurotus ostreatus.

TL;DR: The oyster mushroom cultivated in solid state on sugarcane bagasse-wheat bran (5:1) medium in the presence of veratryl alcohol resulted in an increased production of the fruiting body at earlier times compared to when the fungus was grown in the absence of veratsine.
Journal ArticleDOI

Chemical and microbiological evaluation of ensiled sugar cane with different additives

TL;DR: In this article, a study of cana de acucar ensilada with aditivos for 30 dias was carried out, and the results showed that the presence of bacterias aerobicas facultativas and fungos filamentosos nao for being detected in nenhum dos tratamentos analisados.
