Abstract: 1. Contaminated chicken meat remains an internationally important vehicle for human infection with Salmonella and Campylobacter spp. In addition, the last 20 years has seen an international pandemic of human salmonellosis caused by the contamination of eggs with Salmonella Enteritidis. 2. It has been a long held scientific view that Campylobacter spp. and most, if not all of the common zoonotic salmonella, are essentially commensal in chickens. They usually form part of the gut flora and contaminate chicken carcases, for example, by faecal spillage at slaughter. Even when certain salmonella serovars like S. Enteritidis are invasive in laying hens overt evidence of clinical disease is rare and the birds appear to behave normally. 3. Are these bacteria just 'passing through' the avian host and only transient members of the bacterial flora or is there a more dynamic perspective to this infection/colonisation process? Chickens mount antibody responses to both pathogens, which indicate something other than commensalism. Such immune responses, however, do not always result in the clearance of the pathogen. 4. Not all animals in a group will carry salmonella or campylobacter, even under experimental conditions, and will vary, especially those that are outbred, in their responses to pathogen challenge. Identifying the reasons behind this could have important implications for disease control. 5. Both salmonella and campylobacter are more likely to be found in animals, which are compromised and this may explain at least part of the variations seen. Animals are more susceptible to infection when they are in a poor environment, fed a poor diet and/or under physical or psychological stress. 6. Work in this area has naturally focused on pathogens of medical significance and has shown that neurotransmitters such as noradrenaline can markedly alter pathogen behaviour. Other host responses like Interferon gamma can also affect host tissues in a way, which facilitates invasion by pathogens and may also interact directly with certain bacteria. 7. From a food safety perspective, there is evidence that egg contents contamination in ovo may be linked to transient stress in the hen. Current work at the University of Bristol on the epidemiology of campylobacter in broiler production is also showing a potential link between gut health and campylobacter colonisation and challenging the concept that these bacteria are common commensals. 8. The poor economic returns received by the egg and poultry industries mean that intensive production methods are common. Is it possible to rear chickens under these conditions in such a way as to exclude zoonotic pathogens like salmonella and campylobacter? Data from the UK strongly suggest that this is possible with the former pathogen. Can similar advances be achieved with campylobacter?

Abstract: 1. The effect of dietary formic acid on performance, digestibility, intestinal histomorphology and plasma metabolite levels of broiler chickens was studied. 2. An experiment with 120 Ross male broiler chickens was conducted from 1 to 42 d of age at the laboratory. There were 4 treatment groups: control (C), 10 mg/kg feed avilamycin (AV) and formic acid at two concentrations, 5 and 10 g/kg feed (FA5 and FA10, respectively). 3. No differences in weight gain, feed intake or feed conversion ratio were observed in male broiler chickens fed on the different diets. 4. An effect of the additives on ileal dry matter (DM) digestibility at 42 d of age was detected with the finisher diets; AV and 10 g/kg of feed formic acid slightly improved ileal DM digestibility compared to the other treatment groups. 5. Jejunum pH was not affected when 5 or 10 g/kg formic acid was added, and the results do not clearly show a positive effect of formic acid on the intestinal histomorphology. 6. No differences were noticed for blood metabolites in the different diets, and the levels of calcium and phosphorus in the plasma were not altered by formic acid addition. 7. In conclusion, when using broiler chickens under conditions of good hygiene, dietary formic acid did not have a clear positive effect on performance, intestinal histomorphology or plasma metabolite levels; however, there was a slight positive effect on the ileal digestibility of nutrients.

Abstract: 1. The effects of various sources of natural carotenoids (Px alfalfa concentrate, tomato powder and marigold extract) as feed additives in quail diets on egg yolk pigmentation and carotenoid composition were investigated. 2. Adult Japanese quail were fed one of 5 different diets for 23 d: three diets each contained Px alfalfa concentrate (PX) or tomato powder (TP) or marigold extract (MG), one diet contained marigold extract and tomato powder (MG + TP) and a control diet (wheat/barley based) was low in carotenoid. All products were added at a rate of 2%, apart from marigold extract which was added at a rate of 0.2%. 3. Visual assessment of yolk colour (Roche colour fan) showed a stabilised yolk colour of 1.6, 7.7, 8.5, 8.8 and 10.6 for the control, PX, TP, MG and MG + TP treatments, respectively. 4. The total carotenoid concentration of the egg yolks were 2.2, 22.4, 4.1, 39.0 and 37.7 microg/g for the experimental groups fed the following diets: control, PX, TP, MG and MG + TP, respectively. Deposition of retinol, alpha-tocopherol and gamma-tocopherol in the egg yolk was unaffected by treatments. 5. Lutein was shown to be the major carotenoid in the egg yolk, comprising 1.65, 17.97, 2.03, 31.14 and 28.57 microg/g in control, PX, TP, MG and MG + TP, respectively. Inclusion of TP in the quail diet resulted in lycopene transfer to the egg. 6. It was concluded that, in comparison with the control group, there was an increase in the yolk concentrations of lutein, zeaxanthin, lycopene and beta-carotene in eggs produced by female quail fed diets supplemented with natural carotenoids.

Abstract: 1. This study was conducted to investigate the effects of methionine and betaine supplementation on growth performance, carcase composition and lipid metabolism in growing broilers. 2. A total of 450 commercial broilers, 22 d of age, were randomly allocated to three groups, each of which included three replicates (50 birds per replicate). The groups received the same methionine-deficient diet supplemented with 0 or 1 g/kg methionine, or 0.5 g/kg betaine, respectively. 3. Methionine and betaine supplementation significantly improved weight gain and feed conversion. Supplemental methionine and betaine also significantly increased breast muscle yield and decreased abdominal fat content. Meanwhile, addition of methionine and betaine significantly increased the contents of creatine and free carnitine in liver, the activity of hormone-sensitive lipase in abdominal fat and the concentration of free fatty acid in serum, whereas uric acid concentration in serum was significantly decreased. 4. The results of this study suggest that betaine can spare methionine in its function as an essential amino acid and is as effective as methionine in improving performance and carcase quality of growing broilers if the diet is moderately deficient in methionine. The decrease in abdominal fat may be due to the increased carnitine synthesis in liver and hormone-sensitive lipase activity in abdominal fat.

Abstract: 1. Physiological and behavioural measures of stress in caged hens on a commercial farm were compared between White Leghorn and brown Hyline strains, and between three tiers of cages. 2. Blood and faecal samples were collected from undisturbed birds for corticosterone measurements. Plasma corticosterone responses to a stressor were measured by the collection of blood samples after 15, 30, and 60 min of a handling stressor. Tonic immobility and novel object tests were used to measure fear behaviour. 3. Plasma corticosterone in undisturbed hens and faecal corticosterone did not differ between White Leghorn and brown Hyline hens, whereas the plasma corticosterone response to a handling stressor was greater in White Leghorns. The duration of tonic immobility, latency to first head movement and number of head movements in tonic immobility tests were greater in white than brown birds, whereas the number of inductions was less for tonic immobility tests. Abstract: 1. The effects upon bone quality of feeding limestone in flour or particulate form and housing type (cage or aviary) in lines of hens divergently selected for high (H) or low (L) bone strength over 7 generations were investigated. 2. As in previous generations, highly significant phenotypic differences between lines were observed in all measured bone traits at peak egg production (25 weeks) and towards the end of production (56 weeks) in both cage and aviary systems. 3. At 25 weeks there were no significant effects on bone variables of feeding particulate limestone although a significant reduction in osteoclast number was observed at this age. By 56 weeks osteoclast numbers were further reduced in hens fed particulate limestone and beneficial effects on some bone variables were observed in this treatment group. 4. The genotypic and dietary improvements upon bone quality were independent and additive at both ages. There were very few interactive effects. 5. Hens with the freedom to move in an aviary environment during the laying period had improved bone status compared to caged siblings. Environmental and genotypic effects were additive. 6. There were no effects of line on egg production although H line hens had slightly higher egg production by 56 weeks. Egg numbers were unaffected by diet. Eggshell thickness and strength were unaffected by line but hens fed particulate limestone had thicker- and stronger-shelled eggs over the production period as a whole. 7. We conclude that; (a) genetic selection is extremely effective in improving bone strength and resistance to osteoporosis; (b) allowing hens freedom to exercise can also improve bone strength but may increase the risk of keel damage if they do not have genetically-improved bone status; (c) feeding hens a particulate form of limestone from 15 weeks onwards can also increase bone strength and eggshell quality; (d) genetics, environment and nutrition all have independent and additive effects on bone status in laying hens but the relative effectiveness of these factors is genetics > environment > nutrition.

Abstract: 1. Genetic selection of broilers may have pushed muscle fibres to their maximum functional size constraints. Broiler (B), female great-grandparent (GGP) and layer (L) lines were weighed, blood sampled and killed from 5 to 25 weeks of age. 2. At 25 weeks, Pectoralis major (Pm) fibre size reached by the B (65·9 µm) and GGP (59·8 µm) were 1·5 times greater than the L (38·1 µm). In the B and GGP lines, fibre growth of the Pm markedly exceeded that of the Biceps femoris (Bf) muscle. However, in the L line, fibre growth of the Pm and Bf muscle was comparable. Connective tissue content was generally higher in the Bf than in the Pm of all lines. 3. Centralised nuclei were observed predominantly in Pm, and may regulate fibre size. Both large muscle fibres and inadequate capillary supply may induce metabolic stress in B and GGP lines due to the large diffusion distances for oxygen, metabolites and waste products. 4. Abstract: 1. Our objective was to evaluate the toxic effects of aflatoxin B1 (AFB1) and fumonisin B1 (FB1), administered singly or in combination to broilers. 2. Feeds were prepared with concentrations equal to 0, 50 and 200 microg AFB1/kg, and/or 0, 50 and 200 mg FB1/kg, and offered to broiler chicks from 8 to 41 d of age. The experimental design was totally randomised, in a 3 x 3 factorial arrangement with 9 treatments and 12 birds per treatment. Animals were vaccinated against Newcastle disease on d 14 of life and killed at 41 d. 3. Compared with controls, all mycotoxin-treated groups at 41 d had lower body weight and weight gain, and higher relative heart weight. The relative weight of the liver increased only in birds fed diets containing 200 mg FB1, singly or in combination with AFB1. 4. At 35 d, all groups receiving mycotoxin-treated rations had reduced geometrical mean antibody titres, with birds from groups fed combinations of AFB1 and FB1/kg having even lower values, when compared to the other groups. 5. Histological changes were observed only in liver from birds fed mycotoxin-contaminated rations, and in kidneys of birds fed the diet containing 200 microg AFB1 and 200 mg FB1/kg. Main alterations included vacuolar degeneration and cell proliferation of bile ducts in the liver, and hydropic degeneration in renal tubules in the kidneys. 6. We concluded that AFB1 and FB1 in combination have primarily additive effects on body weight, liver structure and immunological response of broilers at the concentrations used.

Abstract: 1. Management practices, stocking rate and flock size may affect laying hen welfare but there have been few replicated studies in commercial non-cage systems that investigate this. This study used a broad range of physical and physiological indicators to assess the welfare of hens in 36 commercial flocks. 2. Six laying period treatments were examined with each treatment replicated 6 times. It was not possible to randomly allocate treatments to houses, so treatment and house were largely confounded. 3. Three stocking rates were compared: 7 birds/m2 (n = 2450), 9 birds/m2 (n = 3150) and 12 birds/m2 in either small (n = 2450) or large (n = 4200) flocks. In addition, at 12 birds/m2, in both small and large flocks, birds were subjected to either standard (SM) or modified (MM) management. MM flocks had nipple drinkers and no nest-box lights. 4. Abstract: 1. The effects of acute heat stress (2 h at 32 degrees C and 75% RH) on body temperature and indices of respiratory thermoregulation and skeletal muscle function were examined in two divergently selected male grandparent lines of broiler and layer-type chickens at two ages (35 and 63 d), or at a similar body weight (approximately 2.2 kg). 2. The two chicken lines exhibited markedly different baseline blood acid-base and skeletal muscle characteristics. At the same age or live weight, birds from the broiler line had significantly higher venous blood carbon dioxide tensions associated with lower blood pH. Plasma creatine kinase (CK) activities reflecting muscle membrane damage were also greatly elevated in the broiler line. 3. Exposure to acute heat stress caused an increase in deep body temperature, panting-induced acid-base disturbances and elevated plasma CK activity in both lines of chicken, an effect that increased with age. The extent of disturbances in acid-base regulation and heat-stress-induced myopathy were more pronounced in the broiler than the layer line at the same age or similar live weights. 4. It is suggested that genetic selection for high muscle growth in broiler lines has compromised their capacity to respond to an acute thermal challenge, leading to detrimental consequences for muscle function. Abstract: 1. On-farm quantification of sustainability indicators (SI) is an effective way to make sustainable development measurable. The egg production sector was used as a case study to illustrate this approach. 2. The objective was to select SI for economic, ecological and societal issues, and to analyse the performance on selected SI of different production systems. 3. For the case study, we compared 4 egg production systems, characterised by differences in the housing systems which are most common in the Netherlands: the battery-cage system, the deep-litter system with and without outdoor run, and the aviary system with outdoor run. 4. Based on a clear set of criteria, we selected SI for animal welfare, economics, environmental impact, ergonomics and product quality. 5. We showed that on-farm quantification of SI was an appropriate method to identify the strengths and weaknesses of different systems. 6. From this analysis it appears that the aviary system with outdoor run is a good alternative for the battery-cage system, with better scores for the aviary system on animal welfare and economics, but with worse scores on environmental impact.

Abstract: 1. We examined the effects of supplemental dietary vitamin E (Vit E) on semen quality and antioxidative status in male domestic fowls exposed to oxidative stress induced by synthetic glucocorticoid, dexamethasone (DEX) injection. 2. Thirty-six Egyptian local cross males, 42 weeks old, were housed individually in cages in an open-sided building under 16 h light:8 h dark and were provided with commercial feed and water ad libitum. Birds were divided into 4 groups: DEX (4 mg/bird/d), Vit E (200 mg/kg diet), DEX + Vit E (4 mg/bird/d + 200 mg/kg diet, respectively) and control, n = 9. All treatments lasted for 7 continuous days. 3. Oxidative stress induced by injection of DEX (4 mg/bird/d) resulted in decreased sperm count and motility correlated with an increased percentage of dead sperms. Vit E (200 mg/kg diet) enhanced sperm count and viability when supplemented to stress-induced birds, compared to DEX treatment alone. 4. In seminal plasma, low calcium concentration, high lipid peroxidation and reduced activity of glutathione peroxidase were associated with the oxidative stress. Vit E reduced lipid peroxidation in the seminal plasma. 5. In conclusion, excessive supplemental dietary Vit E improved semen quality when cockerels were subjected to stress conditions. It increased both sperm count and motility, reduced the percentage of dead sperm and enhanced the antioxidative status of seminal plasma.

Abstract: 1. The effects of selenium and vitamin E supplementation on some immune parameters were investigated in broilers. 2. Broiler chicks were fed on maize-soybean diets with different concentrations of vitamin E (0-200 mg/kg) and selenium (0-0.2 mg/kg diet) either alone or in combinations from 1 to 42 d of age. 3. Chicks were immunised against Newcastle disease virus (NDV) vaccine at 21 d of age and haemagglutination inhibition (HI) titres were determined after 10 d. 4. Chicks receiving supplements of 200 mg vitamin E/kg and 0.2 mg selenium/kg produced significantly higher HI antibody titres. This was associated with an increased serum concentration of total immunoglobulins and circulatory immune complexes. 5. The chicks given 200 mg vitamin E/kg and 0.2 mg selenium/kg had significantly heavier spleen and bursa. 6. These results suggested that vitamin E and selenium have synergistic effects on immune responses.

The effects of light source and intensity on leg health and performance of female ROSS 308 broiler chickens were investigated in a 2 x 2 experimental design (8 groups of 275 chicks) of two light sources (Osram biolux and Osram warm-white) and two light intensities (5 and 100 clux, adjusted to fowl-perceived illuminance). 2. At 41 d of age, body weight, gait-score, footpad dermatitis and hock-burn were measured on 50 birds from each light environment. In addition, weekly feed intake and body weight were determined on a group basis and mortality was recorded continuously. 3. The light environment did not affect the severity of the gait-score or hock-burns. The risk of moderate to severe lameness and hock-burns increased with body weight. Birds weighing more than 2400 g had an increased probability of moderate footpad lesions in biolux light. 4. Weight and gait-score, as well as gait-score and hock-burn were positively correlated. Podo-dermatitis was weakly correlated with hock-burn, which contradicts earlier findings. The light environment did not affect feed intake, body weight or mortality. 5. The light sources and intensities employed in this study did not adversely affect production or leg health of broiler chickens reared semi-commercially.

The aim of the present study was to investigate whether grain type (barley or oats) and ss-glucanase inclusion influence the performance and the gastrointestinal ecosystem of broiler chickens, taking the concentrations of short-chain fatty acids and lactic acid, pH, ileal viscosity, and the weight of the caeca and liver into consideration. 2. The inclusion of beta-glucanase in the oat-based diet improved body weight gains. Enzyme supplementation of barley-based diets improved feed conversion efficiency and reduced intestinal viscosity. 3. Irrespective of the type of cereal, beta-glucanase supplementation increased the lactic acid concentration and lowered the pH of the crop contents. No such changes in fermentation were observed in the contents of the gizzard and ileum. 4. Larger amounts of total dietary fibre and its fractions (arabinoxylans and beta-glucans) in oats decreased the weight of the caeca. 5. Molar ratios of acetate, propionate and butyrate in the caecal chyme were affected by cereal type but not by enzyme supplementation. The barley-based diet increased the butyrate:propionate ratio but the opposite effect was observed with the oat-based diet.

Abstract: 1. Conventional cages are to be replaced by furnished cages or aviary systems to improve the welfare of hens. We compared the performance and egg quality of hens reared in two designs of furnished cages and of two standard cages. We also explored the consequences of the absence of beak trimming when using these designs. 2. Hens (2028) were housed from 18 to 70 weeks of age in 108 standard cages at 6 per cage (60 cmx63.5 cm), in 96 cages at 5 per cage (59.5 cmx55.5 cm) or in two designs of furnished cage at 15 per cage (24 F15M cages and 36 F15P cages made by two manufacturers) which contained equipment varying in size and location (nests, dust baths and perches). Half of the hens were beak-trimmed in each design. 3. Mortality was low in beak-trimmed hens ( 40%, 516 hens). Mortality was worse in standard cages than in furnished cages. Consequently, hen-housed egg production was significantly lowered in non-beak-trimmed hens. 4. Egg laying in beak-trimmed hens reared in furnished cages occurred mainly in the nest (80 and 84.8% in F15M and F15P) but also in the dust bath (13.3 and 9.4% in F15M and F15P) and in other parts of the cage (6.7 and 5.8% in F15M and F15P). 5. The total percentage of broken (visual observation) and hair-cracked eggs (candling) was high in the furnished cage designs (15.4 and 19.6% in F15M and F15P, respectively) compared with standard cage designs (8.1 and 12.2% in S6 and S5). This was mainly due to hair-cracked eggs, the highest percentages occurring in the nests, especially in the design with a narrow nest and no egg saver (11.1% in F15M compared to 17.6% in F15P) as a consequence of egg accumulation in the cradle and relatively low frequency of manual egg collection. 6. Eggshell quality (index and breaking strength) was only slightly influenced by cage effects so differences in egg breakage were attributable to impacts related to cage design. 7. It is concluded that beak trimming remains the most effective way to prevent cannibalism, although furnished cages with a large group of hens slightly reduced the incidence, and that further development and optimisation of furnished cages is needed to reach egg quality similar to standard cages.

Abstract: 1. An experiment was conducted to study the possibility of replacing soybean meal (SBM) with sunflower seed meal (SFM) in broiler chick diets. The SBM in broiler starter (317.9 g/kg) and finisher (275.4 g/kg) diets was replaced with SFM at 33, 67 and 100% on an iso-caloric and iso-nitrogenous basis using sunflower oil to balance the energy content of the diets. The metabolisable energy levels used in the diet were considerably less than the recommended levels for broilers. Each experimental diet was fed ad libitum from 2 to 42 d of age to 8 replicates of 5 birds. Parameters studied included amino acid and apparent metabolisable energy contents in food ingredients, body weight, food intake, food efficiency, leg abnormality score, dry matter digestibility, carcase traits, relative weight and length of intestine, fat and protein content in liver and serum biochemical profile. 2. SFM had higher concentrations of calcium, phosphorus, methionine and cystine and lower energy content than SBM. 3. Replacement of SBM with SFM up to 67% in starter and 100% in finisher diets did not affect weight gain. Total and 67% replacement of SBM with SFM depressed food efficiency at 21 and 42 d of age, respectively. Food intake was significantly higher in SFM-based diets than in the SBM reference diet at 21 and 42 d of age, except in groups given SFM100 at 21 d of age. In the latter group, the food intake was similar to that on the SBM reference diet. The digestibility of dry matter decreased with increased levels of SFM in the diet. 4. The relative weights of giblet, liver and abdominal fat, length of intestine, activity of alkaline phosphatase, concentrations of calcium and inorganic phosphorus in serum were not influenced by incorporation of SFM in the broiler diet. 5. The ready to cook yield and liver fat content decreased, while the relative weights of gizzard and intestine and protein content in liver increased, with increasing levels of SFM in the diet. 6. The concentration of HDL cholesterol increased while the concentration of LDL cholesterol decreased with increasing content of SFM (> or =67% of SBM) in diet. The serum protein concentration decreased progressively with increase in dietary SFM. The concentrations of protein and triglycerides in serum were lowest in groups receiving SFM100. 7. Body weight gain was not affected by total replacement of SBM with SFM at 42 d of age. However, considering food efficiency, carcase yields, serum lipid profile and level of supplemental fat in diet, it is concluded that SFM can replace up to two-thirds of soybean, corresponding to inclusion of 345 and 296 g SFM per kg for starter and finisher phases, respectively.

The prevalence and severity of foot pad dermatitis (FPD) was examined in 359 flocks of broiler chickens comprising about 3.93 million birds produced on 91 farms and reared under 5 types of system: standard intensive, free-range, organic, systems complying with the RSPCA Freedom Food scheme, and corn-fed. 2. The mean prevalence of FPD in standard systems was 14.8%. Flocks that had access to the outside (free-range and organic systems) showed higher prevalence of FPD than those kept entirely indoors (standard, corn-fed and Freedom Food systems). The lowest prevalence of FPD (9.6%) and severity of the lesions occurred in Freedom Food systems, and the highest prevalence (98.1%) and severity in organic systems. 3. The survival and penetration of Salmonella enterica serovar Enteritidis (SE) inoculated on the eggshell was examined upon storage for up to 20 d at real-life conditions (15 to 25 degrees C and 45 to 75% relative humidity (RH)). 2. Penetration was assessed by emptying the egg contents and filling the eggs with a selective medium that allowed visualising Salmonella growth on the inside of the shell and membrane complex. 3. The study of survival on the eggshells was based on viable counts and showed that numbers of surviving organisms decreased over time. Survival was inversely related to storage temperature and RH. Although the average counts decreased over time, a limited proportion of shells carried high numbers of SE at all storage conditions. 4. Penetration spots were observed earlier using an increased storage temperature due to increased growth rates of SE on the agar. After 20 d of storage a similar percentage (c. 44.7%) of eggshells became penetrated, irrespective of the storage conditions tested in this study. 5. Salmonella shell counts exceeding 4 log cfu yielded more than a 90% probability of eggshell penetration occurring.

Abstract: 1. Eleven broiler chicken farms, representing 4 production system types, were visited during the last 5 d of the flock cycle: bird and flock details were recorded. Litter friability was assessed at 9 sites within the house, atmospheric ammonia was measured at three sites and bird cleanliness was assessed on a numerical rating scale. 2. For these flocks, hock burn, foot burn and breast burn were measured at the processing plant by standardised assessors. 3. Significant correlations were identified between the percentage of birds with foot burn and average litter score, average house ammonia concentrations and feather score. 4. No correlation was found between the percentage of birds with hock burn or breast burn and average litter scores, average ammonia concentrations or feather score. 5. Abstract: 1. Laying hen performance and yolk fat fatty acid (FA) concentrations were evaluated with respect to the inclusion in the diet of different sources and levels of marine fish oil (MFO). 2. Twelve diets were arranged factorially, with three sources (MFO1, MFO2_EPA, MFO3_DHA) and four levels of inclusion (15, 30, 45 and 60 g/kg) of MFO. 3. Abstract: 1. Relationships between feed conversion ratio, growth curve parameters and carcase composition were investigated on 1061 chickens from a slow-growing line of label-type chickens. The growth curve was modelled with the Gompertz function. Individual feed conversion ratio (FCR) was recorded between 8 and 10 weeks of age and residual feed consumption (RES) was calculated over the same interval. Abdominal fat yield (AFY), breast yield (BRY) and leg yield (LY) were also measured on the birds following slaughter at 75 d of age. 2. The means for FCR and RES were 3.15 and 0.62 g, respectively. Growth curve parameters were 0.141/d for initial specific growth rate (L), 0.031/d for maturation rate (K) and 48.9 d for age at inflexion (TI). Mean values for BRY, LY and AFY were 166, 306 and 40 g/kg, respectively. 3. Heritability of FCR and RES were moderate to high (0.33 and 0.38 to 0.45). Growth curve parameters and LY were moderately heritable (0.22 to 0.34) and BRY and AFY were highly heritable (0.50 and 0.66). Genetic correlations between growth curve parameters and either FCR or RES were low to moderate (-0.31 to 0.51). LY and AFY were highly correlated with FCR (-0.70 and 0.44) and RES (-0.32 and 0.44) but BRY was not (0.00 and -0.35). These results show that indirect selection for feed conversion ratio is possible by using growth curve parameters and abdominal fatness, which do not require rearing the chickens in cages.

At 28, 37, 47 and 58 weeks of age, the proportion of dirty eggs was higher in one of the furnished cage designs while, in the other, it was similar to standard cages. 3. At 27, 33 and 60 weeks, the bacterial load on the eggshell (total aerobic bacteria and enterococci) was higher in furnished cage designs. A seasonal effect was observed with lower counts at 60 weeks (winter) than at 27 weeks (summer). 4. Abstract: The bacterial eggshell contamination of eating eggs in different commercial housing systems; two conventional cages, one organic aviary system and one barn production, were compared. The total counts of aerobic bacteria and the total counts of Gram-negative bacteria on the shell were used to detect key points where contamination occurred and to study the progress of contamination in the egg collection and transportation chains. The key points in the chain were those where eggs accumulated on a short conveyor belt, initial shell contamination in the alternative housing systems and extra nest-boxes placed on the ground. The high bacterial load of floor eggs (>6.3 log CFU total aerobic flora/eggshell) explains why they cannot be used for eating. On average higher initial shell contamination with total counts of aerobic bacteria was found for eggs from the alternative housing systems compared to the conventional systems; respectively 5.46 compared to 5.08 log CFU/eggshell. However, initial contamination with total counts of Gram-negative bacteria on the shells was less in the alternative systems: 3.31 compared to 3.85 log CFU/shell. Initial bacterial shell contamination tended to correlate positively with the concentration of bacteria in the air of the poultry houses. Storing shell eggs, whether temporarily refrigerated or not, for 9 d or more, resulted in a decrease in bacterial eggshell contamination for both bacterial variables.

Abstract: 1. Two experiments were performed to assess the effect of different amounts of dietary polyunsaturated fatty acids (PUFA) on fatty acid composition of chickens. The contribution of de novo fatty acid synthesis to fatty acid profile was also estimated. 2. In trial 1, different fat sources were blended in different ratios allowing a gradient of dietary PUFA (from 15 to 61 g/kg), keeping added fat constant (9%). In trial 2, PUFA-rich oil was added at increasing inclusion rates (2, 4, 6 and 8%), achieving a dietary PUFA content ranging between 27 and 59 g/kg. 3. A study was conducted to evaluate the effect of inclusion of two fat sources: high-oleic acid sunflower seed (HOASS; 0, 50, 100, 150 and 200 g/kg diet) and palm oil (PO), and dietary supplementation of vitamin E (alpha-tocopheryl acetate, 200 mg/kg diet) on performance, fatty acid composition and susceptibility to oxidation of white and dark chicken meat during refrigerated storage. Female chicks (3 to 6 weeks) were given one of 5 diets containing 90 g/kg of added fat with increasing monounsaturated fatty acid (MUFA) content, adjusted by progressively replacing PO by HOASS. 2. Body weight gain and gain:food ratio of birds were depressed in diets containing the highest proportions of HOASS (150 and 200 g/kg). Relative abdominal fat was reduced in birds fed diets including HOASS, except in the diet containing 100 g HOASS/kg. The inclusion of alpha-tocopheryl acetate improved body weight gain and gain:food ratio. 3. According to the fatty acid profile of the diets, saturated and polyunsaturated fatty acid (SFA and PUFA, respectively) contents were significantly reduced and MUFA content was significantly increased in white and dark chicken meats when the saturated oil, PO, was replaced progressively by HOASS in the diet. The inclusion of alpha-tocopheryl acetate increased PUFA content in both meats. 4. After 4 and 7 d of refrigerated storage, white and dark meat samples obtained from birds fed on diets containing HOASS had significantly lower thiobarbituric acid reacting substance (TBARS) values than those derived from the PO diet. The addition of alpha-tocopheryl acetate significantly reduced the lipid oxidation in white and dark meat. 5. Overall, the results showed that increasing MUFA content of chicken meat by replacing dietary PO with HOASS (up to 100 g/kg) did not adversely affect broiler performance and reduced the susceptibility of meat to oxidation during refrigerated storage. Dietary alpha-tocopherol supplementation improved chicken performance and was effective in protecting lipid meat from oxidation.
