The fundamental mechanisms of lipid oxidation, the most important oxidative reactions, the main factors that influence lipid oxidisation, and the routine methods to measure compounds derived from lipid oxidation in meat are reviewed.
Abstract
Meat and meat products are a fundamental part of the human diet. The protein and vitamin content, as well as essential fatty acids, gives them an appropriate composition to complete the nutritional requirements. However, meat constituents are susceptible to degradation processes. Among them, the most important, after microbial deterioration, are oxidative processes, which affect lipids, pigments, proteins and vitamins. During these reactions a sensory degradation of the product occurs, causing consumer rejection. In addition, there is a nutritional loss that leads to the formation of toxic substances, so the control of oxidative processes is of vital importance for the meat industry. Nonetheless, despite lipid oxidation being widely investigated for decades, the complex reactions involved in the process, as well as the different pathways and factors that influenced them, make that lipid oxidation mechanisms have not yet been completely understood. Thus, this article reviews the fundamental mechanisms of lipid oxidation, the most important oxidative reactions, the main factors that influence lipid oxidation, and the routine methods to measure compounds derived from lipid oxidation in meat.

Effects of Ephedra alata extract on the quality of minced beef meat during refrigerated storage: A chemometric approach

TL;DR: During storage time, the used chemometric approaches were useful in discriminating meat samples, and therefore offers an approach to underlay connections between meat quality features, demonstrating the strong potential of EAE as a natural preservative in meat and meat products.

Proximate Composition, Amino Acid Profile, and Oxidative Stability of Slow-Growing Indigenous Chickens Compared with Commercial Broiler Chickens.

TL;DR: The aim of the present study was to characterize the meat quality traits of the Polverara, by comparing the proximate composition and amino acid profile with that of a commercial Hybrid, and results indicate that the Polvara has better nutritional meat quality.

Fatty Acid Composition of Meat Animals as Flavor Precursors

TL;DR: In this article, an overview of fatty acids in meat, their variation among animal species, and the roles of fat acids as flavor precursors are discussed. But, the interactions between lipid oxidation products and Maillard compounds are more important for the development of meat flavor than originally thought.

Use of olive oil as fat replacer in meat emulsions

TL;DR: In this article, the benefits of using structured olive oil as fat replacement can be summarized in four parts: (1) benefits of olive oil and aspects related with the total or partial substitution of animal fat to produce meat products healthier; (2) main systems for application of healthier oil in meat products (3) technological and sensory attributes affected (4) future perspectives and conclusions.

Effects of fatty acids on meat quality: a review

TL;DR: Interest in meat fatty acid composition stems mainly from the need to find ways to produce healthier meat, i.e. with a higher ratio of polyunsaturated (PUFA) to saturated fatty acids and a more favourable balance between n-6 and n-3 PUFA.

Flavour perception of oxidation in beef

TL;DR: Meat oxidation increased throughout display for each of the diets, as shown by a rise in TBARS values, and positive attributes, such as beef flavour or overall liking, decreased throughout display, whereas negative attributes, such as abnormal and rancid flavours, increased.

Why lipid oxidation is major form of meats deterioration?

Lipid oxidation is a major form of meat deterioration because it leads to sensory degradation, consumer rejection, and nutritional loss, as well as the formation of toxic substances.
