TLDR
In this paper, a fully predictive, algebraic method has been developed for the prediction of the timewise temperature variation of a thermal load situated in an electrically heated oven, taking into account both natural convection within the oven cavity and radiation between the thermal load and the oven walls.

Heat and mass transfer in combined convective and far-infrared drying of fruit leather

TL;DR: In this paper, heat and mass transfer of fruit leather drying with combination of hot air and far-infrared has been carried out, and the heat and the mass transfer coefficients were analyzed by heat-mass analogy.
Journal ArticleDOI

Modelling of coupled heat and mass transfer for combined infrared and hot-air drying of sweet potato

TL;DR: In this article, a numerical model was developed to accurately predict moisture content and temperature distribution for sweet potato during combined infrared and hot-air drying (IR-HAD), considering both temperature and shrinkage dependent diffusivity.

Computational fluid dynamics (CFD) modeling of an electrical heating oven for bread-baking process

TL;DR: In this paper, a 3D CFD model for an electric heating baking oven was developed and three different radiation models, namely, discrete transfer radiation model (DTRM), surface to surface (S2S), and discrete ordinates (DO), were employed for the simulation of the electrical baking oven.
