Abstract
In a commercial pectinase preparation an enzyme has been found which attacks only the methyl ester of pectic acid. A study of the breakdown products by ultraviolet absorption, ozonation and reaction with thiobarbituric acid indicated the presence of Δ-4,5 unsaturated galacturonic acid groups.
