TL;DR: In this article, the effect of the hydrolysis time of pepsin on the antioxidant activity of jellyfish protein hydrolysate (ep-JPH) has been evaluated, and it was shown that increased hydroxylation time increased the degree of hydrolytic (DH) and inhibition of DPPH radical.
