TL;DR: In this paper, the usefulness of a bite force apparatus for measuring bite forces generated while biting extruded crisp snacks was assessed and compared to perceived sensory crispness, hardness, brittleness and sound duration evaluated by eight individuals.
Abstract: The usefulness of a bite force apparatus for measuring bite forces generated while biting extruded crisp snacks was assessed. Snacks were produced using a twin-screw extruder, and their textural properties were modified by equilibrating to water activities ranging from 0.11 to 0.44. Maximum force to bite, stress, duration and area under the bite force curve were analyzed and compared to perceived sensory crispness, hardness, brittleness and sound duration evaluated by eight individuals. Maximum bite force and stress were significantly related to hardness, brittleness and crispness showing for the first time, and the relationship between sensory crispness of extruded crisp products and hardness was measured intraorally.

TL;DR: It is postulated that OA diol-ester, as a lipid-soluble, uncharged molecule with a propensity to hydrolyse to OA, may facilitate the transfer of OA across cell walls and membranes.

TL;DR: Theoretical aspects of total dual integrality are discussed in this article, where several classes of TDI linear systems are surveyed and general properties of the general TDI properties are discussed.
Abstract: Let A be a rational m × n matrix and b be a rational m-vector. The linear system Ax ≤ b is said to be totally dual integral (TDI) if for all integer n-vectors c, the dual of the linear program max{cx : Ax≤b} has an integer-valued optimum solution if it has an optimum solution. We consider two topics: First we discuss the theoretical aspects of total dual integrality. Second, we survey several classes of TDI linear systems and show how the general properties of total dual integrality appy to each class.

TL;DR: In this article, the effects of gender on the occupational expectations and attitudes of youth in the 1990s were examined using data from a longitudinal survey of youth, and the results showed few gender differences in the status rankings in the youths' expected occupations, or in their intentions to enter the paid labour force.
Abstract: This article uses data from a longitudinal survey of youth to examine the effects of gender on the occupational expectations and attitudes of youth in the 1990s. Twelve hundred youth from central and eastern Canada were surveyed in 1989 and 1994. Results show few gender differences in the status rankings in the youths' expected occupations, or in their intentions to enter the paid labour force. However, there were differences in the ways females and males saw themselves combining work and family responsibilities—especially pre-school aged children. The attitudes and experiences of the young women's mothers appeared to affect these plans—plans that were unrelated to social class background. The results are discussed in the context of McCall's notion on gendered dispositions.

TL;DR: In this article, the volatile pyrolysates of galactan sulfates have been examined by capillary gas chromatography-mass spectrometry and showed that initial glycosidic bond cleavage occurs followed by formation of unique pyrolysis products, e.g., anhydrosugars.
