Modelling the competitive growth between Listeria monocytogenes and biofilm microflora of smear cheese wooden shelves
TL;DR: Compared to monoculture, L. monocytogenes growth rate in co-culture was not reduced but the growth of the pathogen stopped as soon as BM entered the stationary phase, and this reduction in maximum population density can be explained by nutrient consumption and exhaustion by BM.
Journal ArticleDOI
Diversity and assessment of potential risk factors of Gram-negative isolates associated with French cheeses.
Monika Coton,Céline Delbès-Paus,Françoise Irlinger,Nathalie Desmasures,Anne Le Fleche,Valérie Stahl,Marie-Christine Montel,Emmanuel Coton +7 more
TL;DR: The goal of this study was to identify at the species level a large collection of Gram-negative dairy bacteria isolated from milks or semi-hard and soft, smear-ripened cheeses (cheese core or surface samples) from different regions of France.
Journal ArticleDOI
The FRISBEE tool, a software for optimising the trade-off between food quality, energy use, and global warming impact of cold chains
Sunny George Gwanpua,Pieter Verboven,D. Leducq,T Brown,Bert Verlinden,Elias Abebe Bekele,Wondwosen Abebe Aregawi,Judith A. Evans,AM Foster,Steven Duret,Hong-Minh Hoang,S.M. van der Sluis,E. Wissink,Leonardus Johannes Arnoldus Maria Hendriksen,Petros Taoukis,Eleni Gogou,Valérie Stahl,M. El Jabri,J.F. Le Page,I. Claussen,E. Indergård,Bart Nicolai,Graciela Alvarez,A.H. Geeraerd +23 more
TL;DR: The FRISBEE tool as discussed by the authors is developed within the framework of the European Union FP7 project, Food Refrigeration Innovations for Safety, consumers' Benefit, Environmental impact and Energy optimisation along the cold chain in Europe.
Journal ArticleDOI
Validation of a stochastic modelling approach for Listeria monocytogenes growth in refrigerated foods
Olivier Couvert,Anthony Pinon,H. Bergis,F Bourdichon,Frédéric Carlin,Marie Cornu,Catherine Denis,Nathalie Gnanou Besse,Laurent Guillier,Emmanuel Jamet,Eric Mettler,Valérie Stahl,Dominique Thuault,Véronique Zuliani,Jean-Christophe Augustin +14 more
TL;DR: This model seems relevant to take into consideration the natural variability of processes governing the microbial behaviour in foods and is an effective approach to assess the probability to exceed a critical threshold during the storage of foods like the limit of 100 CFU/g in the case of L. monocytogenes.
Journal ArticleDOI
Development and Validation of Experimental Protocols for Use of Cardinal Models for Prediction of Microorganism Growth in Food Products
Anthony Pinon,Marcel H. Zwietering,Louise Perrier,Jeanne-Marie Membré,Benoît Leporq,Eric Mettler,Dominique Thuault,Louis Coroller,Valérie Stahl,Michèle Vialette +9 more
TL;DR: The proposed methods were used within the French national program of predictive microbiology, Sym′Previus, to include challenge test results in the database and to obtain predictive models designed for microbial growth in food products.
