Abstract
The invention relates to a new and fast device for determination of freshness of the food of animal origin, specifically to the electronic nose, to a method for determination of freshness of the food by using a portable electronic nose which analyses volatile compounds and gases in the meat headspace, and to a system that includes the electronic nose and the tool for shielding extraneous odours and forming the defined headspace. The invention describes a fast and simple method for determination of the meat freshness, which is easy to use and the results get by it are objective and reliable.
