It has been shown that lactate inhibits growth after the log phase and that the maintenance of low lactate concentrations after this point permits higher specific growth rates and higher maximum cell concentrations.Abstract:
Growth and lactic acid production by L. delbrueckii was studied in a dialysis culture system and the inhibitory effect of lactate confirmed by removing lactate from the culture medium by dialysis. It has been shown that lactate inhibits growth after the log phase and that the maintenance of low lactate concentrations after this point permits higher specific growth rates and higher maximum cell concentrations. Acid production is also significantly higher in a dialysis culture system. Finally, a modification of the Luedeking‐Piret model, incorporating the lactate inhibition effect, is proposed.read more

Fermentation Processes for the Production of Lactic Acid
TL;DR: As with many other biotechnological processes, lactic acid fermentation has evolved from an ancient "art" associated with the processing and preservation of foodstuffs, to a presently sophisticated technology as mentioned in this paper.

Lactic acid production by a filter-bed-type reactor
TL;DR: In this article, a novel membrane reactor, named a filter-bed-type reactor, was designed to produce lactic acid, which was equipped with a membrane filter to immobilize cells of Streptococcus faecalis, was operated continuously for two weeks.

TL;DR: In many countries, including Canada, most of the whey is discarded as waste creating severe pollution problems owing to its biological oxygen demand (BOD) (35 000-40 000 ppm) as discussed by the authors.

Augmentation of mass transfer through electrical means for hydrogel‐entrapped Escherichia coli cultivation
TL;DR: A mathematical model taking into account nutrient depletion, inhibitory end‐product formation, and cell growth kinetics under facultatively anaerobic conditions was developed to rationalize the overall transport and biological behaviors in the hydrogel.
