It has been shown that lactate inhibits growth after the log phase and that the maintenance of low lactate concentrations after this point permits higher specific growth rates and higher maximum cell concentrations.Abstract:
Growth and lactic acid production by L. delbrueckii was studied in a dialysis culture system and the inhibitory effect of lactate confirmed by removing lactate from the culture medium by dialysis. It has been shown that lactate inhibits growth after the log phase and that the maintenance of low lactate concentrations after this point permits higher specific growth rates and higher maximum cell concentrations. Acid production is also significantly higher in a dialysis culture system. Finally, a modification of the Luedeking‐Piret model, incorporating the lactate inhibition effect, is proposed.read more

Sorption of mono-carboxylic acids by an anion-exchange membrane
TL;DR: In this paper, an ion exchange between a dissociated carboxylic acid ion and a counter ion on the fixed charge in an anion exchange membrane has been studied, and the selectivity coefficients of mono-carboxyl acid were determined by a model which considered with dissociation equilibrium of carboxyl acids, material balance in the solution, and electrical neutrality in the membrane.

TL;DR: A model for lactic acid production is suggested which fits the experimental data from the chemostat better than previously proposed models, a modification of the original Luedeking-Piret expression including a term with negative substrate dependence.
