Potential effects of flavonoids on the etiology of vascular disease
Derek D. Schramm,J. Bruce German +1 more
TL;DR: Reviewed data suggest that if the total plasma flavonoid load exceeds a few micromoles per liter in vivo, flavonoids will protect humans against vascular damage that results from the aforementioned causes.
Journal ArticleDOI
Protein Digestion of Baby Foods: Study Approaches and Implications for Infant Health
TL;DR: More systematic evaluations of digestion are emerging to advance the knowledge and its translation as food design for effective diet and health management in infants.
Journal ArticleDOI
Saturated Fats: A Perspective from Lactation and Milk Composition
J. Bruce German,Cora J. Dillard +1 more
TL;DR: Looking at the evolution of lactation, and the composition of milks that developed through millennia of natural selective pressure and natural selection processes, it is possible that evolution of the mammary gland reveals benefits to saturated fatty acids that current recommendations do not consider.
Journal ArticleDOI
Size-dependent lipid content in human milk fat globules.
Nurit Argov,Sebastian Wachsmann-Hogiu,Samara L. Freeman,Thomas R Huser,Carlito B. Lebrilla,J. Bruce German +5 more
TL;DR: In this article, a strong Raman peak at 1742 cm(-1) corresponding to the triacylglycerol core was detected in the 5 and 10 microm diameter globules, whereas in the smaller HMFGs no detectable peak was found.
Journal ArticleDOI
Stability of aqueous foams: analysis using magnetic resonance imaging
TL;DR: Etude par spectroscopie RMN du H1, de la structure and de la stabilite des mousses de creme, de blanc d'oeuf and de biere.
