TL;DR: The reaction quantum yield for photooxidation of oxymyoglobin to metmyoglobin in dilute aqueous solution and in beef extract has been determined and constitutes an objective measure of the effectiveness with which monochromatic light promotes the formation of met myoglobin in meat.
