Abstract: Intrauterine growth retardation (IUGR), defined as impaired growth and development of the mammalian embryo/fetus or its organs during pregnancy, is a major concern in domestic animal production. Fetal growth restriction reduces neonatal survival, has a permanent stunting effect on postnatal growth and the efficiency of feed/forage utilization in offspring, negatively affects whole body composition and meat quality, and impairs long-term health and athletic performance. Knowledge of the underlying mechanisms has important implications for the prevention of IUGR and is crucial for enhancing the efficiency of livestock production and animal health. Fetal growth within the uterus is a complex biological event influenced by genetic, epigenetic, and environmental factors, as well as maternal maturity. These factors impact on the size and functional capacity of the placenta, uteroplacental blood flows, transfer of nutrients and oxygen from mother to fetus, conceptus nutrient availability, the endocrine milieu, and metabolic pathways. Alterations in fetal nutrition and endocrine status may result in developmental adaptations that permanently change the structure, physiology, metabolism, and postnatal growth of the offspring. Impaired placental syntheses of nitric oxide (a major vasodilator and angiogenic factor) and polyamines (key regulators of DNA and protein synthesis) may provide a unified explanation for the etiology of IUGR in response to maternal undernutrition and overnutrition. There is growing evidence that maternal nutritional status can alter the epigenetic state (stable alterations of gene expression through DNA methylation and histone modifications) of the fetal genome. This may provide a molecular mechanism for the role of maternal nutrition on fetal programming and genomic imprinting. Innovative interdisciplinary research in the areas of nutrition, reproductive physiology, and vascular biology will play an important role in designing the next generation of nutrient-balanced gestation diets and developing new tools for livestock management that will enhance the efficiency of animal production and improve animal well being.

Abstract: We evaluated and compared various broken-line regression models and SAS (SAS Inst. Inc., Cary, NC) procedures for estimating nutrient requirements from nutrient dose response data. We used the SAS (Version 9) procedures NLIN and NLMixed and the response data of Parr et al. (2003), who evaluated the isoleucine requirement of growing swine. The SAS NLIN was used to fit 2 different broken-line regression models: a simple 2 straight-line, one-breakpoint model and a quadratic broken-line model in which the response below the single breakpoint was quadratic; there was a plateau above the breakpoint. The latter was fit using 2 different approaches in NLIN. We also used SAS NLMixed to fit 3 different broken-line models: the 2 straight-line, one-breakpoint model that included a random component for the plateau; the quadratic broken-line model that included a random component for the plateau; and the quadratic broken-line model that included random components for both the plateau and the slope of the curve below the requirement. The best fit (greater adjusted R2; least log likelihood) was achieved using SAS NLMixed and the quadratic model with a random component for asymptote included in the model. Model descriptions, SAS code, and output are presented and discussed. Additionally, we provide other examples of possible models and discuss approaches to handling difficult-to-fit data.

Abstract: Data from 3 summer feedlot studies were utilized to determine the environmental factors that influence heat stress in cattle and also to determine wind speed (WSPD; m·s -1 ) and solar radiation (RAD; W·m -2 ) adjustments to the temperature-humidity index (THI). Visual assessments of heat stress, based on panting scores (0 = no panting to 4 = severe panting), were collected from 1400 to 1700. Mean daily WSPD, black globe temperature at 1500, and minimums for nighttime WSPD, nighttime black globe THI, and daily relative humidity were found to have the greatest influence on panting score from 1400 to 1700 (R 2 = 0.61). From hourly values for THI, WSPD, and RAD, panting score was determined to equal -7.563 + (0.121 x THI) - (0.241 x WSPD) + (0.00082 x RAD) (R 2 = 0.49). Using the ratio of WSPD to THI and RAD to THI (-1.992 and 0.0068 for WSPD and RAD, respectively), adjustments to the THI were derived for WSPD and RAD. On the basis of these ratios and the average hourly data for 1400 to 1700, the THI, adjusted for WSPD and RAD, equals [4.51 + THI - (1.992 x WSPD) + (0.0068 x RAD)]. Four separate cattle studies, comparable in size, type of cattle, and number of observations to the 3 original studies, were utilized to evaluate the accuracy of the THI equation adjusted for WSPD and RAD, and the relationship between the adjusted THI and panting score. Mean panting score derived from individual observations of black-hided cattle in these 4 studies were 1.22, 0.94, 1.32, and 2.00 vs. the predicted panting scores of 1.15, 1.17, 1.30, and 1.96, respectively. Correlations between THI and panting score in these studies ranged from r = 0.47 to 0.87. Correlations between the adjusted THI and mean panting score ranged from r = 0.64 to 0.80. These adjustments would be most appropriate to use, within a day, to predict THI during the afternoon hours using hourly data or current conditions. In addition to afternoon conditions, nighttime conditions, including minimum WSPD, minimum black globe THI, and minimum THI, were also found to influence heat stress experienced by cattle. Although knowledge of THI alone is beneficial in determining the potential for heat stress, WSPD and RAD adjustments to the THI more accurately assess animal discomfort.

Abstract: Residual feed intake (RFI) is the difference between the actual and expected feed intake of an animal based on its BW and growth rate over a specified period. The biological mechanisms underlying the variation in feed efficiency in animals with similar BW and growth rate are not well understood. This study determined the relationship of feedlot feed efficiency, performance, and feeding behavior with digestion and energy partitioning of 27 steers. The steers were selected from a total of 306 animals based on their RFI following feedlot tests at the University of Alberta Kinsella Research Station. Selected steers were ranked into high RFI (RFI >0.5 SD above the mean, n = 11), medium RFI (RFI ± 0.5 SD above and below the mean, n = 8), and low RFI (RFI 0.10). Residual feed intake was correlated with daily methane production and energy lost as methane (r = 0.44; P < 0.05). Methane production was 28 and 24% less in low-RFI animals compared with high- and medium-RFI animals, respectively. Residual feed intake tended to be associated (P < 0.10) with apparent digestibilities of DM (r = -0.33) and CP (r = -0.34). The RFI of steers was correlated with DE (r = -0.41; P < 0.05), ME (r = -0.44; P < 0.05), heat production (HP; r = 0.68; P < 0.001), and retained energy (RE; r = -0.67; P < 0.001; energy values are expressed in kcal/kg of BW). Feedlot partial efficiency of growth was correlated (P < 0.01) with methane production (r = -0.55), DE (r = 0.46), ME (r = 0.49), HP (r = -0.50), and RE (r = 0.62). With the exception of HP (r = 0.37; P < 0.05), feed conversion ratio was unrelated to the traits considered in the study. Feeding duration was correlated (P < 0.01) with apparent digestibility of DM (r = -0.55), CP (r = -0.47), methane production (r = 0.51), DE (r = -0.52), ME (r = -0.55), and RE (r = -0.60). These results have practical implications for the selection of animals that eat less at a similar BW and growth rate and for the environmental sustainability of beef production.

Abstract: The objective of this study was to characterize genetic, environmental, and economic factors related to the incidence of bovine respiratory disease (BRD) in feedlot calves. Records from 18,112 calves representing 9 breeds (Angus, Braunvieh, Charolais, Gelbvieh, Hereford, Limousin, Pinzgauer, Red Poll, and Simmental) and 3 composite types (MARC I, MARC II, and MARC III) over a 15-yr period (1987 to 2001) were evaluated. Disease incidence was observed and recorded by station veterinary and technical staff. The incidence of BRD varied across years, with the annual observed incidence ranging from 5 to 44%. From 1987 to 1992, the annual average incidence generally exceeded 20%. However, in later years the annual incidence did not exceed 14%. The epidemiological pattern indicated that BRD infection increased dramatically after 5 d on feed and remained high until approximately 80 d on feed. Previous BRD infection during the preweaning period did not influence subsequent BRD infection in the feedlot. Steers were more likely to become sick with BRD than heifers; castration before entry in the feedlot may be a predisposing cause. Few significant differences among breeds were detected for BRD incidence. Adjusted solutions from mixed model analyses indicated that Herefords were generally more susceptible to BRD infection (P < 0.05) than MARC I and III composite types. Composite breed types had similar susceptibility compared with other purebred breeds. Mortality associated with BRD was greatest in Red Poll calves (9%) compared with the average over all breeds (4%). Estimates of heritability for resistance to BRD ranged from 0.04 to 0.08 +/- 0.01. When the observed heritability was transformed to an underlying continuous scale, the estimate increased to 0.18. Selection for resistance to BRD could be effective if phenotypes for BRD resistance were known. Thus, development of an inexpensive and humane method of challenging animals with BRD to determine resistance would be an important step in reducing the incidence of BRD. This study also demonstrated that producer-collected field data could be used for selection against this disease. The economic loss associated with lower gains and treatment costs for BRD infection in a 1,000-cattle feedlot was estimated as dollar 13.90 per animal, not including labor and associated handling costs.

Abstract: In polytocous species such as the pig there is intralitter variation in birth weight and skeletal muscle fiber number. It is commonly recognized that low birth weight in piglets correlates with decreased survival and lower postnatal growth rates. In the majority of low birth weight piglets low numbers of muscle fibers differentiate during prenatal myogenesis, for genetic or maternal reasons, and those low birth weight piglets with reduced fiber numbers are unable to exhibit postnatal catch-up growth. Pigs of low birth weight show the lowest growth performance and the lowest lean percentage at slaughter. In addition, they tend to develop extremely large muscle fibers (giant fibers) and poor meat quality, which results in part from the inverse correlation between fiber number and fiber size. Prenatal growth and myogenesis are under the control of various genetic and environmental factors, which can be targeted for growth manipulation. Genetic selection is considered a suitable tool to improve fetal growth and myogenesis. Prenatal development is mainly dependent on a close interrelation between nutritional supply/use and regulation by hormones and growth factors. In particular, the maternal somatotropic axis plays a significant role in the control of myogenesis. Thus, treatment of sows with GH until mid-gestation was able to increase birth weight and the number of muscle fibers in the small littermates of the progeny that are disadvantaged by insufficient nutrient supply. Growth hormone treatment was associated with increased nutrient availability to the embryos and changes in regulatory proteins of the GH-IGF axis. Interactions between maternal nutrition and the somatotropic axis in determining prenatal growth and myogenesis are worthy of further investigation.

Abstract: The objective of this study was to identify feed additives that reduce enteric methane emissions from cattle. We measured methane emissions, total tract digestibility (using chromic oxide), and ruminal fermentation (4 h after feeding) in growing beef cattle fed a diet supplemented with various additives. The experiment was designed as a replicated 4 x 4 Latin square with 21-d periods and was conducted using 16 Angus heifers (initial BW of 260 +/- 32 kg). Treatments were: control (no additive), fumaric acid (175 g/d) with sodium bicarbonate (75 g/d), essential oil and spice extract (1 g/d), or canola oil (4.6% of DMI). The basal diet consisted of 75% whole-crop barley silage, 19% steam-rolled barley, and 6% supplement (DM basis). Four large chambers (2 animals fed the same diet per chamber) were equipped to measure methane emissions for 3 d each period. Adding canola oil to the diet decreased (P = 0.009) total daily methane emissions by 32% and tended (P = 0.09) to decrease methane emissions as a percentage of gross energy intake by 21%. However, much of the reduction in methane emissions was due to decreased (P < 0.05) feed intake and lower (P < 0.05) total tract digestibility of DM and fiber. Digestibility of all nutrients was also lowered (P < 0.05) by feeding essential oil, but there were no effects on ruminal fermentation or methane emissions. In contrast, adding fumaric acid to the diet increased total VFA concentration (P = 0.03), increased propionate proportions (P = 0.01), and decreased the acetate:propionate ratio (P = 0.002), but there was no measurable effect on methane emissions. The study demonstrates that canola oil can be used to reduce methane losses from cattle, but animal performance may be compromised due to lower feed intake and decreased fiber digestibility. Essential oils had no effect on methane emissions, whereas fumaric acid caused potentially beneficial changes in ruminal fermentation but no measurable reductions in methane emissions.

Abstract: The effects of low-protein AA-supplemented diets on piglet performance, visceral organ mass, incidence of diarrhea, intestinal microbial population, and fermentation were studied in a 3-wk trial. After a 7-d adaptation period, 96 piglets (approximately 6.2 kg of initial BW) were assigned to 4 corn-wheat, soybean meal-based dietary treatments in a completely randomized design to give 6 replicate pens per treatment (n = 4 piglets per pen). The treatments were a control wheat-corn-soybean meal-based phase I diet containing 23% CP, or the same diet with CP reduced to 21%, 19%, or 17% and supplemented with crystalline AA to achieve equal standardized ileal digestible contents of Lys, Met plus Cys, Thr, and Trp in all diets. Diets were formulated to similar nutrient levels and provided ad libitum. Blood from all pigs was taken on d 0, 7, 14, and 21 for determining plasma urea N. Weekly feed intake, BW changes, and G:F were determined. On d 21, 2 pigs per pen were randomly selected and killed to determine small intestinal morphology, digesta pH and ammonia levels, and luminal microbial counts. Average daily feed intake, ADG, and G:F were not affected (P > 0.10) by reducing CP to 21%, but a reduction to 19% or 17% decreased ADFI (P 0.10) on G:F; however, this response criterion was decreased linearly (P 0.10) with dietary CP reduction. Plasma urea N was decreased linearly (P 0.10). The results show that piglet performance may suffer when dietary CP is reduced by 4 or more percentage units from 23% and support the hypothesis that low-CP diets help maintain enteric health in pigs by lowering toxic microbial metabolites such as ammonia.

Abstract: The main purpose of this review is to discuss associations between within-litter variation in birth weight, and preweaning survival and postnatal growth in the pig, as the basis for suggesting that the developmental competence of pigs born, as well as the size of the litter, need critical consideration Extremes of intrauterine growth retardation (IUGR) occur within a discrete subset of fetuses, substantially smaller than their littermates and commonly described as runt piglets The lower preweaning growth of runt pigs cannot be entirely explained based on their lower birth weight, nor do they show full postnatal compensatory growth Interestingly, this more complex reprogramming of development in runt pigs can already be identified by d 27 to 35 of gestation Recently, we reported more universal IUGR effects in commercial dam-line sows, as an indirect response to selection for increased litter size High ovulation rates (>30 ovulations) in a proportion of greater parity sows are associated with increased numbers of conceptuses surviving to d 30 of gestation, resulting in detrimental effects on placental development of uterine crowding in the early postimplantation period In turn, this limits nutrient availability to the embryo during a critical period of myogenesis Consequently, although a reduction in the number of conceptuses occurs by d 50, placental development in the surviving fetuses remains compromised, resulting in IUGR and reduced numbers of muscle fibers at d 90 and at birth, in all surviving littermates These effects of uterine crowding on fetal and postnatal development are analogous to the detrimental effects of nutritional restriction in gestating sows on fetal myogenesis, birth weight, and postnatal growth The incompatibility between increased numbers of conceptuses surviving to the postimplantation period, in the absence of increased uterine capacity, offers a biological explanation for increased variability in birth weight and postnatal growth performance reported in greater parity sows We conclude that a strategy of introducing hyperprolific females into the breeding nucleus, as a means of increasing the numbers of pigs born, needs to be critically evaluated in the context of the overall efficiency of pork production

Abstract: The use of frozen semen in the swine industry is limited by problems with viability and fertility compared with liquid semen. Part of the reduction in sperm motility and fertility associated with cryopreservation may be due to oxidative damage from excessive or inappropriate formation of reactive oxygen species (ROS). Chemiluminescence measurements of ROS are not possible in live cells and are problematic because of poor specificity. An alternative approach, flow cytometry, was developed to identify viable boar sperm containing ROS utilizing the dyes hydroethidine and 2', 7'-dichlorodihydrofluorescein diacetate as oxidizable substrates and impermeant DNA dyes to exclude dead sperm. The percentage of sperm with high mitochondrial transmembrane potential was determined by flow cytometry using the mitochondrial probe 5, 5', 6, 6'-tetrachloro-1, 1', 3, 3'-tetraethylbenzimidazolylcarbocyanine iodide with propidium iodide staining to exclude nonviable cells. Sperm were incubated with and without ROS generators and free radical scavengers. Basal ROS formation was low (less than 4%) and did not differ (P = 0.26) between viable fresh and frozen-thawed boar sperm. In addition, fresh and frozen-thawed viable sperm were equally susceptible (P = 0.20) to intracellular formation of ROS produced by xanthine/xanthine oxidase (94.4 and 87.9% of sperm, respectively). Menadione increased (P < 0.05) ROS formation, decreased (P < 0.05) JC-1-aggregate fluorescence intensity, and decreased (P < 0.05) motion variables by 25 to 60%. The mechanism of inhibition of motility by ROS formation may be related to a decrease in mitochondrial charge potential below a critical threshold. Catalase and superoxide dismutase treatment in the presence of xanthine/xanthine oxidase indicated that hydrogen peroxide was the primary intracellular ROS measured. Further, catalase, but not superoxide dismutase, was capable of attenuating ROS-induced inhibition of motility. Whereas basal intracellular hydrogen peroxide formation was low in viable fresh and frozen-thawed boar sperm, both were quite susceptible to external sources of hydrogen peroxide.

Abstract: Use of ionophores in cattle diets has been proposed as a strategy for mitigation of enteric CH4 emissions. Short- and long-term effects of feeding a single ionophore (monensin) or rotation of 2 ionophores (monensin and lasalocid) on enteric CH4 emissions were evaluated in 36 Angus yearling steers (328 +/- 24.9 kg of BW) over a 16-wk period. Steers were randomly assigned to 6 dietary treatments of 6 steers each. The 6 diets were low-concentrate without ionophore supplementation, low-concentrate with monensin supplementation, low-concentrate with a 2-wk rotation of monensin and lasalocid supplementation, high-concentrate without ionophore supplementation, high-concentrate with monensin supplementation, and high-concentrate with a 2-wk rotation of monensin and lasalocid supplementation. Daily enteric CH4 emissions, as measured using the SF(6) tracer gas technique, ranged from 54.7 to 369.3 L/steer daily. Supplementing ionophores decreased (P 0.05) exhibit a greater decrease and did not (P > 0.05) have a longer period of depressed enteric CH4 emissions compared with cattle receiving monensin only. Ionophore supplementation did not (P > 0.05) alter total ruminal fluid VFA concentration; however, the acetate:propionate ratio and ammonia-N concentration in ruminal fluid were decreased (P 0.05) prevent ciliate protozoal adaptation to ionophores.

Abstract: The objective of this experiment was to measure the digestibilities of energy, CP, and AA in 10 samples of corn distillers dried grain with solubles (DDGS) and in corn fed to growing pigs. Twelve growing barrows (initial BW: 34.0 ± 1.41 kg) were allotted to an 8 × 12 Youden square design with 8 periods and 12 animals. Ten of 12 diets were based on the 10 DDGS samples (66.7%), 1 diet was based on corn (97%), and the last diet was a N-free diet based on cornstarch and sucrose. Chromic oxide (0.3%) was included in all diets as an inert marker. Pigs were provided their respective diets at a level of 3 times their estimated energy re- quirement for maintenance. The apparent (AID) and standardized (SID) ileal digestibilities for CP and AA were measured in the 10 samples of DDGS and in corn using the direct procedure, but the apparent total tract digestibilities for DM and GE were estimated using the difference procedure. The concentration of DE in each sample of DDGS and in corn was also calculated. The results of the experiment indicated variation among the different sources of DDGS in AID and SID for Lys, which ranged from 35.0 to 55.9% and 43.9 to 63.0%, respectively. For Met, the SID varied between 73.9 and 84.7%. However, the variability among samples in the SID for CP, and for the indispensable AA other than Lys and Met, was relatively low and ranged between 6 and 8 percentage units (i.e., from 64.0 to 70.6%, 74.1 to 80.1%, and 67.4 to 75.3% for Thr, Trp, and Ile, respec- tively). The SID for Trp in corn (72.8%) was lower (P < 0.05) than in DDGS, but for the remaining indispens- able AA, except Arg, the SID for corn were greater (P < 0.01) than for DDGS. The DE concentration in the 10 samples of DDGS varied (P < 0.001) from 3,382 to 3,811 kcal of DE per kg of DM. For corn, the DE was 3,845 kcal per kg of DM. It is concluded that the AID and SID for Lys vary among samples of DDGS, but for most other AA the AID and SID are relatively similar and vary only 6 to 8 percentage units among different samples. Future work should focus on identifying the reasons for the variation in the digestibility of Lys to avoid processing procedures that are detrimental to Lys digestibility.

Abstract: The objective of this investigation was to test the hypothesis that -calpain is largely responsible for postmortem proteolysis of muscle proteins. To accomplish this objective, we compared proteolysis of known muscle proteins in muscles of wild type and micro-calpain knockout mice during postmortem storage. Knockout mice (n = 6) were killed along with control mice (n = 6). Hind limbs were removed and stored at 4 degrees C. Muscles were dissected at 0, 1, and 3d postmortem and subsequently analyzed for degradation of nebulin, dystrophin, metavinculin, vinculin, desmin, and troponin T. In a separate experiment, hind limb muscles from knockout (n = 4) and control mice (n = 4) were analyzed at 0, 1, and 3 d postmortem using casein zymography to confirm that mu-calpain activity was knocked out in muscle and to determine whether or not m-calpain is activated in murine postmortem muscle. Cumulatively, the results of the first experiment indicated that postmortem proteolysis was largely inhibited in micro-calpain knockout mice. The results of the second experiment established the absence of micro-calpain in the muscle tissue of knockout mice and confirmed the results of an earlier study that m-calpain is active in postmortem murine muscle. The results of the current study show that even in a species in which m-calpain is activated to some extent postmortem, micro-calpain is largely responsible for postmortem proteolysis. This observation excludes a major role for any of the other members of the calpain family or any other proteolytic system in postmortem proteolysis of muscle proteins. Therefore, understanding the regulation of micro-calpain in postmortem muscle should be the focus of further research on postmortem proteolysis and tenderization of meat.

Abstract: The impact of using 2 beta-adrenergic agonists in feedlot cattle fed finishing diets was evaluated using 54 steers (45 crossbred Charolais and 9 Brangus) initially weighing 424 +/- 26.6 kg in a randomized complete block design with 3 treatments and 6 blocks (i.e., 18 pens with 3 steers per pen). Response variables were feedlot performance, carcass characteristics, and meat quality. Treatments were 1) control (no supplement added); 2) zilpaterol hydrochloride (ZH; 60 mg.steer(-1).d(-1)); and 3) ractopamine hydrochloride (RH; 300 mg.steer(-1).d(-1)). The beta-agonists were added to the diets during the final 33 d of the experiment. The groups of steers fed ZH or RH improved (P < 0.01) ADG by 26 or 24%, respectively, compared with control steers. Steers supplemented with RH consumed less (P = 0.03) DM (8.37 kg) than control steers (8.51 kg), whereas intake was similar (P = 0.37) for ZH and control steers. Addition of either beta-agonist to the diet considerably improved (P < 0.01) the G:F (ZH, 0.253 and RH, 0.248 vs. control, 0.185). Hot carcass weight and carcass yield were enhanced (P < 0.05) with both beta-agonists. The LM area was increased (P = 0.026) by ZH (75.2 cm(2)), but that of RH (72.2 cm(2)) was similar (P = 0.132) to the control steers (66.8 cm(2)). Meat from the ZH- (P = 0.0007) and RH- (P = 0.0267) supplemented steers had greater shear force values than control steers (ZH = 5.11; RH = 4.83; control = 4.39 kg/cm(2)). Variables related to meat color indicated that both beta-agonists led to a similar redness of the LM area related to the control group. In general, feedlot performance was greatly enhanced by beta-adrenergic agonists, and meat tenderness from treated animals was classified as intermediate. Furthermore, meat color was not altered by beta-agonist supplementation.

Abstract: Two experiments were conducted to investigate the physiological responses of Bos taurus (Angus cross, n = 6) and Bos indicus (Brahman, n = 6) cattle to prolonged heat and humidity, as can occur during live export by sea. Each experiment was carried out in climate-controlled rooms, where heifers were exposed to 15 d of sustained heat and humidity. The treatment was designed to be representative of a long-haul, live-export voyage leaving a southern Australian winter and traveling to a Middle Eastern summer. Wet bulb temperature (WBT) was used to give a combined measure of dry bulb temperature and relative humidity and was increased over several days, culminating in 5 d at 32 degrees C WBT between d 7 and 11. By d 11, the respiratory rate and core body temperature increased (P < 0.001) compared with values at lower ambient temperature on d 1 and 2 when climate-controlled rooms were not operating. Feed intake of Bos taurus was reduced (P < 0.001) by d 11, whereas that of Bos indicus did not change (P = 0.14). Despite no diurnal variation in climatic conditions, core body temperature of both Bos taurus and Bos indicus continued to show a circadian amplitude of approximately 1 degrees C throughout the hottest period. This amplitude increased during the recovery period after heat was removed (up to 1.8 degrees C for Bos indicus and 1.6 degrees C for Bos taurus). Water intake for both Bos taurus and Bos indicus increased when WBT increased (P < 0.01 on d 11). Significant acid-base and blood electrolyte imbalances occurred in both Bos taurus and Bos indicus, with changes in Bos taurus being more substantial and prolonged. The increase in respiratory rate coincided with a decrease in the partial pressures of carbon dioxide and bicarbonate in venous blood. However, during the hottest period, average daily venous blood pH remained unchanged. When the heat load was reduced after d 11, the blood pH decreased, indicating metabolic acidosis. Blood pH declined from 7.44 to 7.36 for Bos taurus (P < 0.001) and from 7.44 to 7.38 for Bos indicus (P < 0.001). Other parameters measured include heart rate; packed cell volume; plasma and urine Na, K, and Cl; urine pH; and specific gravity. Our results suggest that Bos taurus cattle experience significant physiological changes during exposure to prolonged and continuous high heat and humidity, with alterations persisting for some days after the heat-stress conditions subside. Bos indicus experience similar but less pronounced physiological changes.

Abstract: The objective of this study was to determine the relationships between birth-weight-associated modifications in histological or chemical muscle characteristics and meat quality traits in pigs. At 68 d of age, Pietrain x (Large White x Landrace) female littermates were allocated into 2 groups on the basis of low birth weight (LW = 1.05 +/- 0.04 kg; n = 15) or high birth weight (HW = 1.89 +/- 0.02 kg; n = 15). Pigs were reared in individual pens with free access to a standard diet up to slaughter at approximately 112 kg of BW. During the growing-finishing period, LW and HW pigs had a similar daily feed consumption, whereas G:F was lower (P = 0.009) for LW pigs than for HW littermates. At final BW, LW pigs were 12 d older (P < 0.001) than HW littermates. Estimated lean meat content, relative proportions of loin and ham in the carcass, and weights of LM and semitendinosus muscle (SM) were decreased (P < 0.05) in LW pigs compared with HW pigs. Conversely, the LW pigs exhibited a fatter carcass, greater activity levels of fatty acid synthase and malic enzyme in backfat (n = 15 per group), and enlarged subcutaneous adipocytes (n = 8 per group) compared with the HW pigs. Similarly, lipid content was increased by 25% (P = 0.009), and mean adipocyte diameter was 12% greater (P = 0.008) in the SM from LW pigs compared with that from HW pigs, whereas lipid content did not vary in the LM of either group. Mean myofiber cross-sectional areas were 14% greater in the LM (P = 0.045) and the SM (P = 0.062) of LW pigs than of HW pigs. Conversely, the total number of myofibers was less (P = 0.003) in the SM of LW vs. HW pigs. There were no differences between groups for glycolytic potential at slaughter and rate and extent of postmortem pH decline in both muscles, as well as for LM drip losses. A trained sensory test panel judged the roast loin meat to be less tender (P = 0.002) in LW pigs relative to HW pigs. Scores for juiciness, flavor, flouriness, and fibrousness of meat did not differ between groups. Overall, negative but somewhat low correlation coefficients were found between LM tenderness score and ultimate pH (r = -0.36; P = 0.06) and between LM tenderness and mean cross-sectional area of myofibers (r = -0.34; P = 0.07). This study demonstrates a lower tenderness of meat from pigs that had a LW, partly as a result of their enlarged myofibers at market weight.

Abstract: The objective of this study was to assess the association of single nucleotide polymorphisms (SNP) developed at the calpastatin (CAST) and mu-calpain (CAPN1) genes with meat tenderness and palatability traits in populations with diverse genetic backgrounds. Three populations were used in the study. One population consisted of Bos taurus that included crossbred animals derived from Hereford, Angus, Red Angus, Limousin, Charolais, Gelbvieh, and Simmental (GPE7; n = 539). Another population consisted of Bos taurus with Bos indicus influence, including crossbred animals from Hereford, Angus, Brangus, Beefmaster, Bonsmara, and Romosinuano (GPE8; n = 580). The third population was Bos indicus and consisted of purebred Brahman (STARS; n = 444). Traits evaluated were meat tenderness measured as Warner-Bratzler shear force (WBSF; kg) at 14 d postmortem, and traits evaluated by trained sensory panels that included tenderness score, juiciness, and flavor intensity. A SNP at the CAST gene had a significant (P < 0.003) effect on WBSF and tenderness score in the GPE7 and GPE8 populations. Animals inheriting the TT genotype at CAST had meat that was more tender than those inheriting the CC genotype. The marker at the CAPN1 gene was significant (P < 0.03) for tenderness score in GPE7 and GPE8. Animals inheriting the CC genotype at CAPN1 had meat that was more tender than those inheriting the TT genotype. Markers at the CAST and CAPN1 genes were associated with flavor intensity in the GPE8 population. Animals inheriting the CC genotype at CAST and the TT genotype at CAPN1 produced steaks with an intense flavor when compared with the other genotypes. An interaction between CAST and CAPN1 was detected (P < 0.05) for WBSF on GPE8. The statistical significance of the interaction is questionable because of the limited number of observations in some cells. Markers developed at the CAST and CAPN1 genes are suitable for use in identifying animals with the genetic potential to produce meat that is more tender.

Abstract: Growing cattle in the United States consume up to 6 kg of starch daily, mainly from corn or sorghum grain. Total tract apparent digestibility of starch usually ranges from 90 to 100% of starch intake. Ruminal starch digestion ranges from 75 to 80% of starch intake and is not greatly affected by intake over a range of 1 to 5 kg of starch/d. Starch apparently digested in the small intestine decreases from 80 to 34% as starch entering the small intestine increases from 0.2 to 2 kg/d. Starch apparently digested in the large intestine ranges from 44 to 46% of starch entering the large intestine. Approximately 70% of starch digested in the small intestine appears as glucose in the bloodstream. Within the range of starch intakes that do not cause rumen upsets, increasing starch (and energy) intake increases the amount of starch digested in the rumen, increases the supply of starch to the small intestine, increases starch digested in small intestine (albeit at reduced efficiency), and increases starch digested in the large intestine, such that total tract digestibility remains relatively constant. With increased starch intake, most of the starch is still digested in the rumen, but increasing amounts of starch escape ruminal and intestinal digestion, and disappear distal to the ileocecal junction. Again, within the range of starch intakes that do not cause rumen upsets, as starch intake increases, hepatic gluconeogenesis increases, glucose entry increases, and glucose irreversible loss increases, with a significant portion lost as CO2. The ability to increase use of dietary starch to support greater weight gains or improved marbling could come from increasing starch digestion in a healthy rumen or in the small intestine, but we conclude that the main limit to use of dietary starch to support live weight gain is digestion and absorption from the small intestine. Increased oxidation of glucose at greater starch intakes may alter energetic efficiency by sparing other oxidizable substrates, like amino acids.

Abstract: Previous research has demonstrated that increasing the CP concentration from 16 to 26% in milk replacers fed to male preruminant dairy calves at 1.5% of BW (DM basis) daily resulted in increased ADG, G:F, and deposition of lean tissue. However, the effects of dietary CP would be expected to vary depending on ME intake. Here, male Holstein calves < 1 wk old were used to determine the effects of feeding rate and CP concentration of isocaloric, whey protein-based milk replacers on growth and body composition. After a 2-wk standardization period, calves were assigned randomly to an initial baseline group or to treatments in a 2 x 4 factorial arrangement of feeding rate (1.25 or 1.75% of BW daily, DM basis) and milk replacer CP concentration (14, 18, 22, or 26% of DM). No starter was offered, but calves had free access to water. After a 5-wk feeding period, calves were slaughtered and body composition was determined. Increasing the feeding rate increased (P < 0.05) ADG, G:F, empty-body gains of chemical components and energy, the percentage of fat in empty BW gain and in the final empty body, and concentrations of IGF-I and insulin in plasma. Increasing the feeding rate decreased (P < 0.01) percentages of water and protein in the empty body and decreased urea N in plasma. Increasing dietary CP concentration linearly increased (P < 0.05) ADG, body length, heart girth, and gains of water and protein but linearly decreased (P < 0.05) fat gain. As dietary CP increased, fat content in empty body gain decreased, and water and protein increased. Increasing CP concentration increased (quadratic, P < 0.02) G:F, with greatest efficiencies for calves fed 22% CP. Gross energetic efficiency (retained energy:intake energy) was greater (P < 0.05) for calves fed at 1.75% of BW daily. Efficiency of dietary protein use for protein gain was greater for calves fed at 1.75% of BW daily but was not affected by dietary CP. The ratio of protein gain to apparently digestible protein intake above maintenance decreased as dietary CP increased. Interactions (P < 0.05) of feeding rate and CP concentration for gains of water and protein indicated that when dietary CP was 26% the ME supply limited protein use by calves fed at 1.25% of BW daily. Body composition of preruminant calves can be markedly altered by manipulating the protein to energy ratio in milk replacers. These dietary effects on body composition and growth are not predicted by current NRC standards.

Abstract: The objectives of this study were 1) to compare temperament assessments, using multiple techniques and over repeated observations, to gauge temperament over the long-term and 2) to evaluate the relationship of the temperament appraisals with serum concentrations of cortisol (CS). Measures of temperament were gathered over 3 repeated observations (60-d interval) of yearling, fall-born Brahman bulls (initial BW = 320 +/- 4 kg; n = 66). Temperament assessments included exit velocity (EV), which was the rate at which the bulls exited the squeeze chute and traversed a fixed distance (1.83 m); pen scores (PEN; 1 = quiet to 5 = excited), ascertained from animal behavior while penned in small groups (n = 5); and chute scores (CHUTE; 1 = quiet to 5 = excited), determined from behavioral responses to restraint on the weigh scale. Temperament measures obtained during the initial data collection (d 0) were all positively correlated (r > or = 0.35, P 0.31, P 0.31, P 0.3). Exit velocity was positively correlated with CS within d 0 (r = 0.26, P = 0.04) and 120 (r = 0.44, P 1 SD above the mean. Mean EV (P < 0.01) decreased from d 0 (2.82 +/- 0.07 m/sec) to 120 (2.11 +/- 0.10 m/sec). Time also influenced (P < 0.01) CS; mean CS decreased between d 0 (14.6 +/- 0.7 ng/mL) and 120 (11.1 +/- 0.8 ng/mL). Measures of EV can be a valuable tool for the assessment of cattle temperament and a possible predictor of temperament and stress responsiveness to future animal handling events.

Abstract: A growth performance and carcass evaluation study was conducted to determine the maximal inclusion rate of corn distillers dried grain with solubles (DDGS) in grower-finisher pig diets when formulated on a total AA basis. A total of 240 (28.4 +/- 0.8 kg of BW) crossbred pigs [(Yorkshire x Landrace) x Duroc] were allotted randomly within sex and weight outcome groups to 1 of 24 pens. Pens were assigned randomly within the initial BW groups to 1 of 4 dietary treatment sequences in a 5-phase grower-finisher feeding program in a 4 x 3 factorial arrangement of treatments. The inclusion level of DDGS (0, 10, 20, or 30%) in the diet and the initial BW class [low (23.2 kg), medium (28.1 kg), or high (33.8 kg)] served as the main factors for the grower-finisher performance study. All diets were formulated to contain similar concentrations of total Lys, ME, calcium, and phosphorus within each phase. Pigs were slaughtered and carcass data were collected when the average BW of pigs in a pen reached 114 +/- 2.25 kg. Dietary treatment and initial weight groups did not interact for any response variables, and only the main effects of dietary treatment are presented. Pigs fed the 20 or 30% DDGS diets had reduced ADG (P < 0.05) compared with that of the 0 or 10% DDGS groups, but ADFI was unaffected by dietary treatment. Gain:feed decreased when pigs were fed 30% DDGS (P < 0.05) compared with the 0, 10, and 20% DDGS dietary inclusion levels. Loin depth was lower in pigs fed the 30% DDGS diets (P < 0.05), but backfat depth and percentage of carcass lean did not differ among treatments. Iodine number of carcass fat increased linearly (P < 0.01) with increasing dietary DDGS concentration, and belly firmness adjusted for belly thickness was reduced (P < 0.05) for pigs fed the 30% DDGS diets compared with pigs fed the 0 or 20% DDGS diets. Color measurements, ultimate pH, and visual evaluations (color, firmness, and marbling scores) of the LM did not differ among treatments. Cooking loss, 24-h drip loss, and total moisture loss were not affected by DDGS in the diets. However, differences were detected between 0 and 20% DDGS treatments for 11-d purge loss (P < 0.05). Dietary treatment did not affect Warner-Bratzler shear force of cooked loin chops. Results from this study indicate that when diets for grower-finisher pigs are formulated on a total AA basis, less than 20% DDGS should be included in the diet for optimal performance and carcass composition. Feeding DDGS in swine finishing diets did not have any detrimental effects on pork muscle quality.

Abstract: As part of an interdisciplinary research project, the performance response of sows and their litters to the probiotic strain Enterococcus faecium NCIMB 10415, as well as some health characteristics of the piglets, were studied. Gestating sows (n = 26) were randomly allotted into 2 groups. The probiotic was administered by dietary supplementation to 1 group of sows and their respective litters (probiotic group), whereas the second group (control group) received no probiotic supplementation. The duration of the treatment was nearly 17 wk for sows (d 90 ante partum until d 28 postpartum) and 6 wk for piglets (d 15 to 56). Body weight and feed consumption were recorded weekly. The frequency of 4 toxin and 5 adhesion genes of putative pathogenic Escherichia coli was monitored weekly (d 7 to 35) by multiplex PCR assays, and fecal consistency of weaned piglets was studied daily. Probiotic treatment of lactating sows led to an overall pre-weaning mortality of 16.2% compared with 22.3% in the control group (P = 0.44). Animal losses during the first 3 d of the suckling period were decreased in the probiotic group (P = 0.09). For piglets (n = 153), which were weaned at 28 d, there were no overall treatment differences in BW gain, feed intake, or feed efficiency. Probiotic supplementation, however, led to nearly a 40% reduction (P = 0.012). The actual percentage of piglets with postweaning diarrhea in the probiotic group was 21% compared with 38% in the control group (P = 0.05). The study on virulence factors of dominant fecal E. coli isolates revealed a high diversity with varying frequency and distribution of each single pathogenicity gene. The 440 isolates carried 29 different pathogenicity gene combinations as well as each of the 9 pathogenicity genes alone. Altogether, isolates with more than 2 pathogenicity genes were quite rare (< or = 10%), and up until d 28 isolates without any pathogenicity gene occurred most frequently. Depending on the time of sampling, one-third or more of all isolates contained est2 or est1b as single gene or in combination with other pathogenicity genes.

Abstract: Four Holstein heifers (360 +/- 22 and 450 +/- 28 kg of BW in Exp. 1 and 2, respectively) fitted with ruminal trocars were used in 4 x 4 Latin square designs to evaluate the effects on ruminal microbial fermentation of the following: Exp. 1, no additive, alfalfa extract (30 g/d, AEX), a mixture of cinnamaldehyde (0.18 g/d) and eugenol (0.09 g/d; CIE1), and AEX and CIE1 in combination; and Exp. 2, no additive, anise oil (2 g/d), capsicum oil (1 g/d), and a mixture of cinnamaldehyde (0.6 g/d) and eugenol (0.3 g/d). Heifers were fed a 90:10 concentrate:barley straw diet (16% CP; 25% NDF) for ad libitum intake. Each period consisted of 15 d for adaptation and 6 d for sampling. On d 16 to 18, DM and water intakes were measured. On d 19 to 21 ruminal contents were sampled at 0, 3, 6, 9, and 12 h after feeding to determine ruminal pH and the concentrations of VFA, L-lactate, large peptides, small peptides plus AA (SPep+AA), and ammonia N. On d 20 and 21, samples of ruminal fluid were collected at 0 and 3 h after feeding to determine protozoal counts. In Exp. 1, CIE1 and AEX decreased (P < 0.05) total DMI, concentrate DMI, and water intake. The increase (P < 0.05) in SPep+AA and the decrease (P < 0.05) in ammonia N when supplementing CIE1 suggest that deamination was inhibited. Treatment AEX increased (P < 0.05) the acetate to propionate ratio, which is less efficient for beef production. Treatment CIE1 increased (P < 0.05) counts of holotrichs. Effects of AEX and CIE1 were not additive for many of the measured metabolites. In Exp. 2, treatments had no effect on ruminal pH, total VFA concentration, and butyrate proportion. The capsicum oil treatment increased (P < 0.05) DMI, water intake, and SPep+AA N concentration and decreased (P < 0.05) acetate proportion, branched-chain VFA concentration, and large peptide N concentration. The cinnamaldehyde (0.6 g/d) and eugenol (0.3 g/d) treatment decreased (P < 0.05) water intake, acetate proportion, branched-chain VFA, L-lactate, and ammonia N concentrations and increased (P < 0.05) propionate proportion and SPep+AA N concentration. The anise oil treatment decreased (P < 0.05) acetate to propionate ratio, branched-chain VFA and ammonia N concentrations, and protozoal counts. The results indicate that at the doses used a mixture of cinnamaldehyde and eugenol, anise oil, and capsicum oil may be useful as modifiers of rumen fermentation in beef production systems.

Abstract: We determined whether a fixed-time AI (TAI) protocol could yield pregnancy rates similar to a protocol requiring detection of estrus, or estrous detection plus TAI, and whether adding a controlled internal device release (CIDR) to GnRH-based protocols would enhance fertility. Estrus was synchronized in 2,598 suckled beef cows at 14 locations, and AI was preceded by 1 of 5 treatments: 1) a CIDR for 7 d with 25 mg of PG F(2alpha) (PGF) at CIDR removal, followed by detection of estrus and AI during the 84 h after PGF; cows not detected in estrus by 84 h received 100 mug of GnRH and TAI at 84 h (control; n = 506); 2) GnRH administration, followed in 7 d with PGF, followed in 60 h by a second injection of GnRH and TAI (CO-Synch; n = 548); 3) CO-Synch plus a CIDR during the 7 d between the first injection of GnRH and PGF (CO-Synch + CIDR; n = 539); 4) GnRH administration, followed in 7 d with PGF, followed by detection of estrus and AI during the 84 h after PGF; cows not detected in estrus by 84 h received GnRH and TAI at 84 h (Select Synch & TAI; n = 507); and 5) Select Synch & TAI plus a CIDR during the 7 d between the first injection of GnRH and PGF (Select Synch + CIDR & TAI; n = 498). Blood samples were collected (d -17 and -7, relative to PGF) to determine estrous cycle status. For the control, Select Synch & TAI, and Select Synch + CIDR & TAI treatments, a minimum of twice daily observations for estrus began on d 0 and continued for at least 72 h. Inseminations were performed using the AM/PM rule. Pregnancy was diagnosed by transrectal ultrasonography. Percentage of cows cycling at the initiation of treatments was 66%. Pregnancy rates (proportion of cows pregnant to AI of all cows synchronized during the synchronization period) among locations across treatments ranged from 37% to 67%. Pregnancy rates were greater (P < 0.05) for the Select Synch + CIDR & TAI (58%), CO-Synch + CIDR (54%), Select Synch & TAI (53%), or control (53%) treatments than the CO-Synch (44%) treatment. Among the 3 protocols in which estrus was detected, conception rates (proportion of cows that became pregnant to AI of those exhibiting estrus during the synchronization period) were greater (P < 0.05) for Select Synch & TAI (70%; 217 of 309) and Select Synch + CIDR & TAI (67%; 230 of 345) cows than for control cows (61%; 197 of 325). We conclude that the CO-Synch + CIDR protocol yielded similar pregnancy rates to estrous detection protocols and is a reliable TAI protocol that eliminates detection of estrus when inseminating beef cows.

Abstract: We evaluated the effects of a 6% spray-dried porcine plasma (SDPP) and a plant extracts mixture (XT; 5% carvacrol, 3% cinnamaldehyde, and 2% capsicum oleoresin) on the productive performance, intestinal morphology, and leukocyte cell subsets of early-weaned pigs compared with a control group. Morphometry of the jejunum, ileum, and colon, and immune cell analysis of blood, ileocolic lymph node (LN), and ileal Peyer's patches were done in 24 weaned pigs (20 +/- 2 d) at 19 or 21 d postweaning. Although SDPP and XT treatments did not increase ADG or ADFI, SDPP improved the G:F ratio (P = 0.024) compared with the control group. Dietary SDPP reduced the percentages of blood monocytes (P = 0.006) and macrophages in ileal Peyer's patches and LN (P = 0.04), of B lymphocytes (P = 0.04) and gammadelta+ T cells in LN (P = 0.009), and of intraepithelial lymphocytes (P = 0.026) as well as the density of lamina propria cells in the colon (P < 0.01). Dietary XT reduced intraepithelial lymphocyte numbers in jejunum (P = 0.034) and the percentages of blood cytotoxic cells (P = 0.07) and B lymphocytes in LN (P = 0.03); however, XT increased blood monocytes (P = 0.038) and the density of lamina propria lymphocytes in the colon (P = 0.003). These results indicate that dietary SDPP and plant extracts can affect intestinal morphology and immune cell subsets of gut tissues and blood in weaned pigs. Furthermore, the effects of SDPP suggest lower activation of the immune system of the piglets.

Abstract: Dietary guar gum and cellulose were studied as purified soluble and insoluble nonstarch polysaccharide (NSP) sources, respectively. A control diet containing 14% cornstarch was formulated. A 7% guar gum, a 7% cellulose, and a 7% guar gum + 7% cellulose diet were formulated by adding the NSP to the control diet at the expense of cornstarch (wt/wt), forming a 2 x 2 factorial arrangement. The objectives were to determine whether guar gum and cellulose altered 1) the passage rate of digesta through the small intestine and total tract; 2) the digestibility of energy and CP, characteristics of the digesta, and microbial populations in the ileum; 3) plasma glucose and ghrelin concentrations; and 4) short-term voluntary feed intake and growth performance of grower pigs. In Exp. 1, 12 pigs (27.0 +/- 1.5 kg of BW) were fitted with an ileal T-cannula and were used in a 2-period change-over design, providing 6 observations per diet. Each period included 18 d: a 12-d acclimation period followed by 2-d feces, 3-d digesta, and 1-d venous blood collection periods. In Exp. 1, guar gum and cellulose slowed the passage rate of digesta through the small intestine by 26 and 18%, respectively (P < 0.05). Guar gum increased total tract retention time of the digesta by 14% (P < 0.05). Guar gum and cellulose increased the viscosity of ileal digesta by 72 and 76%, respectively (P < 0.05). Cellulose reduced ileal energy and CP digestibility (P < 0.05), but guar gum only tended to decrease ileal energy digestibility (P < 0.10). Guar gum and cellulose reduced total tract energy and CP digestibility (P < 0.05). At 60 min after feeding, guar gum decreased plasma glucose by 10% (P < 0.10). Guar gum interacted with cellulose to reduce plasma ghrelin before and after feeding (P < 0.05). Guar gum and cellulose interacted to increase ileal bifidobacteria and enterobacteria (P < 0.05); however, guar gum, but not cellulose, increased ileal clostridia (P < 0.05). In Exp. 2, 20 individually housed grower pigs (5 pigs per diet) had free access to the 4 diets used in Exp. 1 for 14 d. Guar gum and cellulose decreased ADG and reduced ADFI on d 0 to 14 (P < 0.05). In summary, increasing purified NSP in the diet reduced the passage rate of digesta, energy and protein digestibility, and feed intake, but increased ileal bifidobacteria and enterobacteria populations. The effects of cellulose were similar to those of guar gum. In conclusion, monitoring of dietary NSP is a critical factor to achieve predictable digestible nutrient intake and intestinal bacterial populations.

Abstract: The main objective of this study was to determine the effect of fiber source and concentration on morphological characteristics, mucin staining pattern, and mucosal enzyme activities in the gastrointestinal tract of pigs. The experiment included 50 pigs from 10 litters weaned at 4 wk of age (BW 8.6 +/- 1.4 kg) and divided into 5 treatment groups. Diets containing fiber of various physico-chemical properties and concentrations were formulated to contain 73, 104, or 145 g of dietary fiber/kg of DM. The diets were based on raw wheat and barley flours. Pectin and barley hulls, representing soluble and insoluble fiber sources, respectively, were used to increase the fiber concentration. The pigs were fed the experimental diets for 9 d, and then the pigs were euthanized and the entire gastrointestinal tract was removed. Tissue samples were taken from the mid and distal small intestine and from the mid colon. Inclusion of pectin in the diets significantly decreased (P < 0.001) ADFI and ADG compared with pigs fed no pectin. The villi and the crypts were shorter in pigs fed pectin-containing diets, but the villous height/crypt depth ratio was unaltered. Pectin significantly decreased the area of mucins in the crypts of the small intestine, indicating that the pigs fed the pectin-containing diet would probably be more susceptible to pathogenic bacteria, although this cannot be separated from the impact on ADFI. The lectin-binding pattern of the intestinal mucosa was unaffected by diet. The activity of lactase and maltase was increased in pigs fed diets with high fiber content, whereas sucrase activity was increased in pigs fed the pectin-containing diets. The activity of the peptidases, aminopeptidase N and dipeptidylpeptidase IV, was increased when feeding high fiber diets, whereas the activity of gamma-glutamyl transpeptidase remained unaffected by the experimental diets. In conclusion, the reduced feed intake observed with the pectin-containing diets could explain the lower villous height and crypt depth observed in this study. However, direct effects of pectin also are possible, and thus further study is warranted. Feeding pigs high insoluble fiber diets improved gut morphology by increasing villi length and increased mucosal enzyme activity when compared with pigs fed pectin-containing diets. The mucin content as determined by staining characteristics suggests that pigs fed high insoluble fiber diets might be better protected against pathogenic bacteria than pigs fed diets high in soluble fiber.

Abstract: Gastrointestinal nematode parasitism is arguably the most serious constraint affecting sheep production worldwide. Economic losses are caused by decreased production, the costs of prophylaxis and treatment, and the death of the infected animals. The nematode of particular concern is Haemonchus contortus, which can cause severe blood loss resulting in anemia, anorexia, depression, loss of condition, and eventual death. The control of nematode parasites traditionally relies on anthelmintic treatment. The evolution of anthelmintic resistance in nematode populations threatens the success of drug treatment programs. Alternative strategies for control of nematode infections are being developed, and one approach is to take advantage of the host's natural or acquired immune responses, which can be used in selection programs to increase the level of resistance in the population. Vaccination can also be used to stimulate or boost the host's acquired immunity. The induction of protective resistance is dependent on the pattern of cytokine gene expression induced during infection by two defined CD4+ T-helper cell subsets, which have been designated as Th1 or Th2. Intracellular parasites most often invoke a Th1-type response, and helminth parasites a Th2-type response. Breeds of sheep resistant to infection have developed resistance over a much longer term of host-parasite relationship than genetically selected resistant lines. The immune components involved in these different responses and types of host-parasite relationships will be reviewed. The potential for using vaccines has been investigated, with variable results, for several decades. The few successes and potential new antigen candidates will also be reviewed.

Abstract: The diet adaptation period is widely considered a critical period of time in which nutritional management practices can promote or impair subsequent performance and health. Performance studies indicate that adapting feedlot cattle with incremental increases in dietary concentrate, from approximately 55 to 90% of diet DM, in 14 d or less, while allowing ad libitum access to the diet, generally results in reduced performance during adaptation or over the entire feeding period. However, the number of cattle involved in these studies does not allow insight into the frequencies of metabolic disorders associated with the management practices tested. Adapting cattle by restricting the quantity of higher-concentrate diets offered shows promise for improving production efficiency, but further development is needed for application in commercial feedlots. Evidence suggests considerable diversity in the ability of animals to cope with ingested cereal grain, and indicates that diet adaptation procedures should affect the frequency of health-impaired or low-performing cattle in a pen. Individuals that seem to effectively regulate voluntary feed intake during adaptation generally display a steady increase in DMI as dietary concentrate is increased. These data also highlight a seemingly counterproductive, repeating cycle of overconsumption, followed by a pronounced reduction in ruminal pH, by cattle that appear to cope less favorably with grain adaptation. At least a portion of this diversity may relate to the maintenance of protozoal populations. Increases in amylolytic bacteria seemed to follow the increment of additional concentrate. Protozoa were most numerous when the diet contained approximately 60% concentrate, and lactate-utilizing bacteria increased more markedly when the diet contained more than approximately 70% concentrate. Available in vivo data suggest that the number of lactate-utilizing bacteria may reach a plateau for a given diet composition after 2 to 7 d, but thorough assessments of the time course of events using modern techniques are lacking. Further research is needed to characterize how the quantity and frequency of increases in cereal grain consumption, reflective of industry practices, impact microbial dynamics, and to identify the biological features that allow certain animals to adapt more readily to high-concentrate diets.

Abstract: Crossbred, spring-calving cows (yr 1, n = 136; yr 2, n = 113; yr 3, n = 113) were used in a 3-yr experiment to evaluate the influence of supplemental protein prepartum and grazing subirrigated meadow postpartum on pregnancy rates and calf feedlot performance. A 2 x 2 factorial arrangement of treatments was used in a switchback design. From December 1 to February 28, cows grazed dormant upland range in 8 pastures (32 +/- 2 ha each). The equivalent of 0.45 kg of supplement/cow per d (42% CP) was provided to half of the cows on a pasture basis 3 d/wk. For 30 d before the beginning of breeding (May 1 to May 31), half of the cows grazed a common subirrigated meadow (58 ha), and the remainder was fed grass hay in a drylot. Cow BW and BCS were monitored throughout the year, and steer calf performance was determined until slaughter. Feeding supplement prepartum improved (P = 0.01 to P < 0.001) BCS precalving (5.1 vs. 4.7) and prebreeding (5.1 vs. 4.9) and increased (P = 0.02) the percentage of live calves at weaning (98.5 vs. 93.6%) but did not affect (P = 0.46) pregnancy rate (93 vs. 90%). Calves born to dams fed supplement prepartum had similar (P = 0.29) birth weight (37 vs. 36 kg) but greater (P = 0.02) weaning weight (218 vs. 211 kg). However, steer feedlot DMI (8.53 vs. 8.48 kg), ADG (1.6 vs. 1.6 kg), and carcass weight (369 vs. 363 kg) were not affected (P = 0.23 to P = 0.89) by prepartum supplementation. Allowing cows to graze subirrigated meadow postpartum improved (P < 0.001) BCS prebreeding (5.2 vs. 4.9) but did not affect (P = 0.88) pregnancy rate (92 vs. 91%). Allowing cows to graze subirrigated meadow increased (P = 0.01) calf weaning weight (218 vs. 211 kg) but not (P = 0.62 to P = 0.91) feedlot DMI (8.4 vs. 8.3 kg), ADG (1.6 vs. 1.6 kg), or carcass weight (363 vs. 362 kg) of their steer calves. Increased percentage of live calves at weaning as a result of feeding supplemental protein increased net returns at weaning and after finishing in the feedlot. Net returns were increased by allowing cows to graze subirrigated meadow postpartum regardless of whether calves were marketed at weaning or after finishing in the feedlot.
