TLDR
From the pH-dependence of the peak current it is possible to affirm that pH 2 is the better condition for the oxidative activity of gallate radicals showing that the antioxidant behaviour of these compounds are important in the stomach acid.

A cyclic voltammetry method suitable for characterizing antioxidant properties of wine and wine phenolics.

TL;DR: Phenolic antioxidants are ranked by reducing strength and characterized for reversibility using cyclic voltammetry at a glassy carbon electrode, providing a qualitative assessment of wine phenolics based on reducing strength.

Antioxidant activity of Agaricus sp. mushrooms by chemical, biochemical and electrochemical assays

TL;DR: The antioxidant activity of five Agaricus sp. mushrooms was screened through chemical, biochemical and electrochemical techniques as discussed by the authors, and it was shown that mushroom extracts revealed similar electrochemical responses, suggesting similar electroactive chemical composition, and oxidation potentials more positive than those of the standards (ascorbic and gallic acids).
Journal ArticleDOI

Laccase-mediated functionalization of chitosan by caffeic and gallic acids for modulating antioxidant and antimicrobial properties

TL;DR: In this paper, a new strategy for the functionalization of chitosan with caffeic acid (CA) or gallic acid(GA) using laccase from Trametes versicolor is presented, yielding a product with modulated antioxidant and antimicrobial properties.

Reduction potentials of flavonoid and model phenoxyl radicals. Which ring in flavonoids is responsible for antioxidant activity

TL;DR: In this paper, the reduction potentials of the flavonoid radicals were investigated using the pulse radiolysis technique and the physicochemical characteristics of the radicals closely matched those of the ring with the lower reduction potential.
