TLDR
The complete amino acid sequence of one of the major wheat protein iso-inhibitors of α-amylase was determined from analysis of fragments and peptides derived from the protein by cleavage with cyanogen bromide and by digestion with trypsin, chymotrypsin , thermolysin and the Staphylococcus aureus V8 protease.
