Sensory interpretation of instrumental measurements 2: sweet and acid taste of apple fruit
TL;DR: The relationship between objective and sensory measurements of apple taste and flavour was investigated in this paper, where the aim was to determine the objective parameters that were best correlated with sensory evaluation, and then to identify the minimum objective difference that was required before a trained sensory panellist could detect a difference in apple taste or flavour.
Journal ArticleDOI
Analysis of expressed sequence tags from Actinidia: Applications of a cross species EST database for gene discovery in the areas of flavor, health, color and ripening

TL;DR: In this article, a collection of 132,577 expressed sequence tags (ESTs) were derived mainly from four Actinidia species (A. chinensis, A. arguta and A. eriantha) and fell into 41,858 non redundant clusters (18,070 tentative consensus sequences and 23,788 EST singletons).
Journal ArticleDOI
Aconitase activity and expression during the development of lemon fruit
TL;DR: A model is presented, which suggests that reduction of the mitochondrial aconitase activity plays a role in acid accumulation, while an increase in the cyt-Aco activity reduces acid level toward fruit maturation.
Journal ArticleDOI

TL;DR: The use of the manual annotation tool WebApollo facilitated manual checking and correction of gene models enabling improvement of computational prediction, especially relevant for certain types of gene families such as the EXPANSIN like genes.
Journal ArticleDOI
Acidity and taste in kiwifruit
TL;DR: In this paper, a sensory comparison of fruit stored at 0, 4, and 10°C was performed for acidity, sweetness, and individual acid concentrations during 6 weeks of storage.
