INFOGEST static in vitro simulation of gastrointestinal food digestion
André Brodkorb,Lotti Egger,Marie Alminger,Paula Alvito,Ricardo Assunção,Simon Ballance,Torsten Bohn,Claire Bourlieu-Lacanal,Rachel Boutrou,Frédéric Carrière,Alfonso Clemente,Milena Corredig,Didier Dupont,Claire Dufour,Catharina Edwards,Matt Golding,Sibel Karakaya,Bente Kirkhus,Steven Le Feunteun,Uri Lesmes,Adam Macierzanka,Alan R. Mackie,Carla Martins,Sébastien Marze,David Julian McClements,Olivia Ménard,Mans Minekus,Reto Portmann,Cláudia N. Santos,Isabelle Souchon,R. Paul Singh,Gerd E. Vegarud,Martin S. J. Wickham,Werner Weitschies,Isidra Recio +34 more
TL;DR: This amended and improved digestion method (INFOGEST 2.0) avoids challenges associated with the original method, such as the inclusion of the oral phase and the use of gastric lipase.
Journal ArticleDOI
The harmonized INFOGEST in vitro digestion method: From knowledge to action
Lotti Egger,Olivia Ménard,Cristina Delgado-Andrade,Paula Alvito,Ricardo Assunção,Simon Balance,Reyes Barberá,André Brodkorb,Thomas Cattenoz,Alfonso Clemente,Irene Comi,Didier Dupont,Guadalupe Garcia-Llatas,María Jesús Lagarda,Steven Le Feunteun,Lonneke M. JanssenDuijghuijsen,Sibel Karakaya,Uri Lesmes,Alan R. Mackie,Carla Martins,Anne Meynier,Beatriz Miralles,Brent S. Murray,Anne Pihlanto,Gianluca Picariello,Cláudia N. Santos,Sebnem Simsek,Isidra Recio,Neil M. Rigby,Laurie Eve Rioux,Helena Stoffers,Ana Tavares,Lucélia Tavares,Sylvie L. Turgeon,Ellen Kathrine Ulleberg,Gerd E. Vegarud,Guy Vergères,Reto Portmann +37 more
TL;DR: An overview of all three inter-laboratory studies is given, showing that the IVD INFOGEST method has led to an increased consistency that enables a better comparability of in vitro digestion studies in the future.
Journal ArticleDOI
The heat treatment and the gelation are strong determinants of the kinetics of milk proteins digestion and of the peripheral availability of amino acids.
Florence Barbe,Olivia Ménard,Olivia Ménard,Yann Le Gouar,Yann Le Gouar,Caroline Buffière,Caroline Buffière,Marie-Hélène Famelart,Marie-Hélène Famelart,Béatrice Laroche,Steven Le Feunteun,Steven Le Feunteun,Didier Dupont,Didier Dupont,Didier Rémond,Didier Rémond +15 more
TL;DR: A significant influence of the meal microstructure and macrostructure on the different steps of milk proteins digestion are suggested, with a heat-induced susceptibility to hydrolysis for β-lactoglobulin and caseins respectively.
Journal ArticleDOI
In vitro digestion of foods using pH-stat and the INFOGEST protocol: Impact of matrix structure on digestion kinetics of macronutrients, proteins and lipids
TL;DR: In this paper, two model matrices of exactly the same compositions (10% oil, 15% whey proteins, w / w ) were designed: i) a liquid emulsion (LE) made of small fat droplets (1μm) dispersed in a liquid continuous phase containing native whey protein, ii) a solid emulsion made of a continuous protein gel entrapping large oil droplets(20μm).
Journal ArticleDOI
Tracking the in vivo release of bioactive peptides in the gut during digestion: Mass spectrometry peptidomic characterization of effluents collected in the gut of dairy matrix fed mini-pigs
Florence Barbe,Florence Barbe,Florence Barbe,Steven Le Feunteun,Steven Le Feunteun,Didier Rémond,Olivia Ménard,Olivia Ménard,Julien Jardin,Julien Jardin,Gwénaële Henry,Gwénaële Henry,Béatrice Laroche,Didier Dupont,Didier Dupont +14 more
TL;DR: In this paper, the authors used tandem mass-spectrometry to identify milk peptides released in the gastrointestinal tract of mini-pigs during the digestion of dairy matrices and determine the effect of the matrix structure on the gut lumen peptidome.
