TLDR
The diversity and predominance of food commodities implicated in outbreaks of salmonellosis during 1998–2008 were examined to clarify links between Salmonella serotypes and specific foods.Abstract:
Salmonella enterica infections are transmitted not only by animal-derived foods but also by vegetables, fruits, and other plant products. To clarify links between Salmonella serotypes and specific foods, we examined the diversity and predominance of food commodities implicated in outbreaks of salmonellosis during 1998-2008. More than 80% of outbreaks caused by serotypes Enteritidis, Heidelberg, and Hadar were attributed to eggs or poultry, whereas >50% of outbreaks caused by serotypes Javiana, Litchfield, Mbandaka, Muenchen, Poona, and Senftenberg were attributed to plant commodities. Serotypes Typhimurium and Newport were associated with a wide variety of food commodities. Knowledge about these associations can help guide outbreak investigations and control measures.read more

NMR-based metabolomic investigation on antimicrobial mechanism of Salmonella on cucumber slices treated with organic acids
TL;DR: In this paper , the antimicrobial mechanism of low-concentration organic acids (1.5% acetic acid, 1% citric acid, and 1. 5% lactic acid) on Salmonella enterica strains (ATCC 6962, ATCC 13076, and ATCC 14028) inoculated on cucumber slices was elucidated.

Survey of the prevalence of Salmonella species on laying hen farms in Kosovo.
TL;DR: A survey on the prevalence of Salmonella (S) species was carried out on 39 layer farms in Kosovo, indicating that table eggs have to be suspected as an important source of human salmone-llosis.

The transfer rate of Salmonella Typhimurium from contaminated parsley to other consecutively chopped batches via cutting boards under different food handling scenarios.
TL;DR: These results demonstrated continuous transfer of Salmonella cells, from contaminated parsley to cutting boards and subsequently re-contaminating up to 6 batches of parsley chopped consecutively on the same surface.

The growing burden of foodborne outbreaks due to contaminated fresh produce: risks and opportunities.
TL;DR: Outbreak investigations represent important opportunities to evaluate contamination at the farm level and along the farm-to-fork continuum and more research into the biology and ecology of pathogen-produce interactions are needed to identify better prevention strategies.
