Abstract: This study was performed to develop a therapeutic diet against aging and obesity, using Yangha(Zingiber mioga R.). Before development of a therapeutic diet, we performed cell viability assay, analysis of general composition, macrominerals and antioxidantive activities of Yangha. Based on the findings from analyzing the results, mook using Yangha powder(0~ 20%) was processed, and tested for quality characteristics such as color values, sensory evaluation and mechanical properties. The result of cell viability assay of myoga, using liver cells, revealed that within the concentration range from 500 ㎍/㎖ to 10,000 ㎍/㎖, cell survivability increased in line with the concentration rate. Therefore, it will not be harmful to consume it as food. Regarding the normal substance of myoga, the water substance of myoga was 94%, which exceeds that of ginger and tumeric with 89% and 83%, respectively. As for crude protein, fat, carbon hydrates and ash, myoga contained less than the other two, which I think is due to the high water substance. Regarding the minerals, potassium had the highest contents among macrominerals of 234.74 ㎎%. As for the antioxidant test, hydroxy radical scavenging activity and superoxide radical scavenging activity were shown. As for the production of Yangha mook(Yangha powder levels were 0~ 20%) for quality characteristics, the more of the powder, the less the L, but the greater the a and b values. Also, for the material property, an increased amount of the powder, resulted in chewiness and springiness, but less gumminess in a correlated manner. However, there were no significant differences in the springiness and cohesiveness in relation to the powder. For the sensory test, jelly type ZM5 with 5% powder showed highest overall preference. According to the sensory test, based on the powder substance, the jelly with 5% powder showed the highest overall score, including preference.

Abstract: To train deep learning models for vision-based action recognition of elders' daily activities, we need large-scale activity datasets acquired under various daily living environments and conditions. However, most public datasets used in human action recognition either differ from or have limited coverage of elders' activities in many aspects, making it challenging to recognize elders' daily activities well by only utilizing existing datasets. Recently, such limitations of available datasets have actively been compensated by generating synthetic data from realistic simulation environments and using those data to train deep learning models. In this paper, based on these ideas we develop ElderSim, an action simulation platform that can generate synthetic data on elders' daily activities. For 55 kinds of frequent daily activities of the elders, ElderSim generates realistic motions of synthetic characters with various adjustable data-generating options, and provides different output modalities including RGB videos, two- and three-dimensional skeleton trajectories. We then generate KIST SynADL, a large-scale synthetic dataset of elders' activities of daily living, from ElderSim and use the data in addition to real datasets to train three state-of the-art human action recognition models. From the experiments following several newly proposed scenarios that assume different real and synthetic dataset configurations for training, we observe a noticeable performance improvement by augmenting our synthetic data. We also offer guidance with insights for the effective utilization of synthetic data to help recognize elders' daily activities.

Abstract: This study was performed to investigate the antioxidative properties of sea buckthorn (Hippophae rhamnoides L.; leaf, fruit and stem) and the quality characteristics of brown rice sulgidduk prepared using a powder of sea buckthorn leaves. First, the antioxidative activities of sea buckthorn were measured to choose the most effective part of this plant. By analyzing the measured values, we concluded that the effective part of sea buckthorn was its leaves. The IC50 value of the DPPH radical scavenging activity and the ABTS radical scavenging activity in sea buckthorn leaves were 7.78 µg/mL and 264.04 µg/mL, respectively. The total polyphenol and total flavonoid contents of sea buckthorn leaves were 3.80 mg/mL and .19 mg/mL, respectively. Therefore, the brown rice sulgidduk was prepared using a powder of sea buckthorn leaves in the weight ratio of 0%, .5%, 1.0%, 1.5%, 2.0% and 2.5%. For analyzing the quality characteristics of the prepared sulgidduk, proximate compositions, color and texture profiles were measured and a sensory evaluation was conducted. With an increase in the added content of the sea buckthorn leaf powder (SBLP), the L-value significantly decreased while the a-value and the b-value increased. In the case of texture profiles, the control group (control A) had a higher score for hardness than the case groups in which the SBLP was added. However, springiness, chewiness and adhesiveness were not significantly different among the groups. In the sensory evaluation, the sample containing 1.5% SBLP yielded the best results. Therefore, we suggest that the powder of sea buckthorn leaves is a good ingredient for increasing the consumer acceptability and functionality of sulgidduk.

Abstract: This study is aimed at qualitatively looking into multi-cultual family mothers' experiences in children's bilingual education. The subjects for the study were seven married immigrant Vietnamese women with elementary school children who have recently finished bilingual education. After recording their interviews and then transcribing them, the data was analyzed by utilizing comparative analysis method. The results were divided into three categories of experiences: emotional, identical, and relational aspects. The results of this study will offer information about necessary support for bilingual education to multi-cultural family members.

Abstract: Blogspace is a primary example of online social networks. In blogspace, there are a number of communities, each of which consists of members having dense relationships with one another. In this paper, we address formation and evolution of blog communities. We first make two claims: (1) A high level of contents similarity of blogs increases the likelihood of their belonging to the same community in a blog network; (2) A high level of contents similarity of communities increases the possibility of their being merged into a bigger community in the future. We verify these claims by analyzing a large volume of real-world blog data of 2 millions bloggers through extensive experiments. Our results provide new insights towards subsequent research on formation and evolution of communities in a blog network.
