Abstract: Regular consumption of dietary antioxidants may reduce the risk of several serious diseases. As vegetables are a major source of antioxidants it is desirable to assess their antioxidant activity and compare different processing and preparation methods. The total antioxidant activity was determined in water- and lipid-soluble extracts from fresh, stored and frozen vegetables. The contribution of individual compounds to total antioxidant activity was estimated. In stored vegetables at ambient or chill temperatures antioxidant activity declined. Blanching and freezing of peas and spinach reduced water-soluble antioxidant activity by 30 and 50%, respectively, thereafter levels remained constant on storage at −20 °C. Samples of frozen peas and spinach purchased from retail outlets had substantially higher antioxidant activity than canned or jarred samples. In a comparison of cooking methods, microwave and boiling for short periods had a negligible effect on total antioxidant activity, but substantial losses occurred after prolonged boiling in water.

Abstract: Purpose - External knowledge is generally believed to be of prime importance to small to medium-sized enterprises (SMEs). However, a review of the literature shows that no empirical research has looked at knowledge management issues at the inter-organizational level in SMEs. This paper seeks to report on an empirical investigation with UK SMEs in the service sector to identify their needs and practices regarding inter-organizational knowledge transfer, and thus provide empirical evidence to support the above belief. Design/methodology/approach - A two-tier methodology (i.e. using both questionnaire survey and interview approaches) is deployed to address the main research objectives. A questionnaire survey of SMEs is carried out to investigate their current inter-organizational knowledge transfer situation and managers' perception on various relevant issues. Then 12 face-to-face interviews with SME managers are conducted to further validate key findings drawn from the questionnaire survey. Findings - The empirical evidence collected from the survey and interviews confirms the general belief that external knowledge is of prime importance for SMEs, and demonstrates that SMEs have very strong needs for external knowledge and inter-organizational knowledge transfer. Research limitations/implications - The findings provide very strong underpinning for further theoretical research on inter-organizational knowledge transfer in SMEs. However, this study has certain limitations: its results may not be applicable to other industrial sectors or the same sector in other countries; or to micro or large companies; nor does it involve cross-cultural issues. Originality/value - By adopting a two-tier research methodology, this study provides more reliable understanding and knowledge on SMEs' inter-organizational knowledge transfer needs and practices, and fills the gap that exists in the empirical investigations on the subject. © Emerald Group Publishing Limited.

Abstract: The local lymph node assay (LLNA) was developed originally as a method for the identification of chemicals that have the potential to cause skin sensitization and allergic contact dermatitis. The assay is based on an understanding that the acquisition of contact sensitization is associated with, and dependent upon, the stimulation by chemical allergens of lymphocyte proliferative responses in skin-draining lymph nodes. Those chemicals that provoke a defined level of lymph node cell (LNC) proliferation (a 3-fold or greater increase compared with concurrent vehicle controls) are classified as skin sensitizers. Following its original inception and development, the LLNA was the subject of both national and international interlaboratory collaborative trials, and of very detailed comparisons with other test methods and with human skin sensitization data. The assay has now been validated fully as a stand-alone test for the purposes of hazard identification. In recent years, there has been a growing interest also in the use of the LLNA to assess the potency of contact allergens and in risk assessment. There is reason to believe that the extent of skin sensitization achieved is associated with the vigour of LNC proliferation induced in draining nodes. Given this relationship, the relative potency of skin sensitizing chemicals is measured in the LLNA by derivation of an EC3 value, this being the concentration of chemical required to provoke a 3-fold increase in the proliferation of LNC compared with controls. Experience to date indicates that relative potency as determined using this approach correlates closely with what is known of the activity of skin sensitizing chemicals in humans. In this article, we review the development, evaluation and validation of the LLNA for the purposes of hazard identification, and the more recent application of the method for evaluation of potency in the context of risk assessment. In addition, we consider what new applications and modifications are currently being investigated.

Abstract: 1. The spectral sensitivity of 7 broiler fowl was determined in a behavioural test. 2. Initially the birds were trained to receive a food reward by pecking at a clear, Perspex panel behind which was a light stimulus (circular, diameter=9 mm), originating from a tungsten-halogen lamp. Subsequently , they were trained to choose between 2 panels only 1 of which was lit; the assignation of light and dark on each panel was randomly ascribed between trials.
