Abstract: Image segmentation is a key task in computer vision and image processing with important applications such as scene understanding, medical image analysis, robotic perception, video surveillance, augmented reality, and image compression, among others, and numerous segmentation algorithms are found in the literature. Against this backdrop, the broad success of Deep Learning (DL) has prompted the development of new image segmentation approaches leveraging DL models. We provide a comprehensive review of this recent literature, covering the spectrum of pioneering efforts in semantic and instance segmentation, including convolutional pixel-labeling networks, encoder-decoder architectures, multiscale and pyramid-based approaches, recurrent networks, visual attention models, and generative models in adversarial settings. We investigate the relationships, strengths, and challenges of these DL-based segmentation models, examine the widely used datasets, compare performances, and discuss promising research directions.

Abstract: Protein oxidation in living tissues is known to play an essential role in the pathogenesis of relevant degenerative diseases, whereas the occurrence and impact of protein oxidation (Pox) in food systems have been ignored for decades. Currently, the increasing interest among food scientists in this topic has led to highlight the influence that Pox may have on meat quality and human nutrition. Recent studies have contributed to solid scientific knowledge regarding basic oxidation mechanisms, and in advanced methodologies to accurately assess Pox in food systems. Some of these studies have provided insight into the reactions involved in the oxidative modifications undergone by muscle proteins. Moreover, a variety of products derived from oxidized muscle proteins, including cross-links and carbonyls, have been identified. The impact of oxidation on protein functionality and on specific meat quality traits has also been addressed. Some other recent studies have shed light on the complex interaction mechanisms between myofibrillar proteins and certain redox-active compounds such as tocopherols and phenolic compounds. This paper is devoted to review the most relevant findings on the occurrence and consequences of Pox in muscle foods. The efficiency of different anti-oxidant strategies against the oxidation of muscle proteins is also reported.

Abstract: Ultrasound, an efficient and virtually innocuous means of activation in synthetic chemistry, has been employed for decades with varied success. Not only can this high-energy input enhance mechanical effects in heterogeneous processes, but it is also known to induce new reactivities leading to the formation of unexpected chemical species. What makes sonochemistry unique is the remarkable phenomenon of cavitation, currently the subject of intense research which has already yielded thought-provoking results. This critical review is aimed at discussing the present status of cavitational chemistry and some of the underlying phenomena, and to highlight some recent applications and trends in organic sonochemistry, especially in combination with other sustainable technologies.
