Ethanol stability of casein micelles cross-linked with transglutaminase
TL;DR: In this article, the influence of transglutaminase (TGase)-induced cross-linking on the ethanol stability of skimmed milk was investigated, and it was shown that TGase-treated casein micelles are more stable against ethanol-induced coagulation.
