TL;DR: In this article, 4α-glucanotransferase-treated rice starch (GS) was prepared by treating rice starch with 4αGTase for 1h (1) and 96h (96h) and physicochemical properties of GS were analyzed, and the capability of GS to improve the encapsulation efficiency and stability of curcumin by forming complexes was investigated.
